Here is another dish that I learned from my husband. This dish is very simple, easy, and quick to prepare and cook. This is the first time that I am going to cook this dish. This dish is commonly cooked here in the hometown of my husband where we are living right now. The dish is called "Sauteed Squad with Fried Fish". Most of the time the fried fish used in this dish is a leftover. According to my husband if there is no fried fish a fried pork is used as a replacement. But today, I am going to use some leftover fried fish (Blue Scad Mackerel fried fish).
The simplicity of the dishes of Ilocanos/Ilokanos is amazing. Most of the time their dishes consist of only 2-3 main ingredients (excluding condiments) and they are still very tasty and most of all healthy. That being said, this dish consists of only two main ingredients, squash/pumpkin and fried Blue Scad Mackerel, all other ingredients ingredients are salt and cooking oil.
Ingredients
- Squash/Pumpkin (450 grams)
- Onion (1/2 slice, medium
- Fried Blue Scad Mackerel (medium, 3 pieces)
- Salt
- Cooking Oil

How to cook
1. I sauteed the onion in a cooking oil
2. After sauteing the onion I added the squash
3. I added about 750 ml of water (I added a lot of water because squash will absorb almost half of the water)
4. Add the fried Blue Scad Mackerel, add some salt, then let it boil until the squash is tender
5. When the the squash is already cooked turn off the heat
6. Put some in a bowl and serve. This can be eaten on its own or can be partnered with rice
Tip: the more fried fish the more tasty the dish will be
