This are the ingredients you will need to make a good egusi soup
1 cup of about 3-5 onions that have been cuted and fresh pepper
4 cups of Egusi melon seeds that have been grinded
Half to 1 cup of palm oil
2 teaspoons of fresh Une Iru (locust beans)
Salt for taste
Grinded crayfish
Cook meat and fish, ( to the quantity you like)
7-8 cups of stock
2 cups of pumpkin leaves well cuted
3 tablespoons of bitterleaf well washed
This is how to prepare it
first you find a pot and and add your palm oil and heat for some minutes and add your une(uri)
Then start adding the stock small small and set the fire on low so the it will heat small
As it is heating you make your egusi pest by mixing the egusi and onions. then when done you add one teaspon of the past to the stock and make sure it form ball
Then heat it for 20_30 minutes so that the egusi will be full done . after that you add your meet fish after like 30 seconds you add your pumpkin and water leaf
After that you close and cook it for like 7 to 10 m till the leaf is full done . then you open your pot and a the bitterleaf then do not close the pot again till it's done . add other seasoning and check the test
