Hoy con una nueva receta de pescado con vegetales. El pescado que compré es la albacora, no la conocía y cuando vi los medallones tan limpios y fresco en el supermercado me animé a comprarlos, además que estaba a muy buen precio.
Cuando le pregunté al pescadero si eso era lo que nosotros conocemos como bonito, me dijo que no, y completó la información diciéndome que era familia del atún y muy similares en sabores.
Me traje dos raciones de 250 gr cada una, me dispuse a preparar la primera, realmente el sabor y la textura son más suaves que el atún y resultó ser un pescado bien sabroso.
Investigando un poquito corroboré la información que me dio el pescadero, sin embargo, me quedó la duda, pues en internet encontré que la albacora es un pescado blanco aunque es familia del atún, el que compré es bastante oscuro por lo que creo que realmente me vendieron fue bonito.
En todo caso quedé satisfecha, ya que como dije, me resultó de suave sabor y acompañado con los vegetales quedó muy sabroso. Te invito a seguir a receta.

Doing a little research I corroborated the information that the fishmonger gave me, however, I was left with a doubt, because on the internet I found that the albacore is a white fish although it is related to tuna, the one I bought is quite dark so I think they really sold me bonito.
In any case I was satisfied, since as I said, it had a mild flavor and with the vegetables it was very tasty. I invite you to follow the recipe.
Ingredientes/Ingredients (1 person)
250 gr de albacora
1/cebolla
¼ de pimentón
2 tomates
1 calabacín
2 ajíes dulces
2 tallos de cebollín
1 rama de perejil
1 limón
2 cucharadas de aceite
1 cucharadita de ajo
Sal y pimienta al gusto
250 gr of albacore

¼ of paprika
2 tomatoes
1 zucchini
2 sweet peppers
2 stalks of chives
1 sprig of parsley
1 lemon
2 tablespoons of oil
1 teaspoon garlic
Salt and pepper to taste
Procedimiento/Procedure
1.- lavamos y sazonamos el pescado con el jugo de medio limón, sal y pimienta. Lo dejamos macerar mientras preparamos los vegetales.
2.- Lavamos y cortamos en cuadros pequeños, el cebollín, la cebolla, ají, pimentón y los tomates, rallamos el calabacín y trituramos el ajo.

2.- Wash and cut into small squares the scallion, onion, chili, bell bell pepper, paprika and tomatoes, grate the zucchini and crush the garlic.
3.- En un caldero agregamos una cucharada de aceite, e incorporamos los vegetales, sal y pimienta. Sofreímos un poco a fuego alto, cuando consideremos que estén sofritos, tapamos, llevamos el fuego al mínimo y dejamos cocinar por 10 minutos aproximadamente, cuidando que no se sequen completamente. Apagamos y reservamos.

We sauté a little over high heat, when we consider that they are fried, we cover, we take the fire to the minimum and we let cook for 10 minutes approximately, taking care that they do not dry completely. Turn off and set aside.
4.- En un sartén agregamos una cucharada de aceite, cuando esté bien caliente incorporamos el pescado, dejamos dorar por ambos lados a fuego alto, cuando este dorado agregamos dos cucharadas de agua, bajamos el fuego y dejamos cocinar por 8 minutos o hasta que consideremos que está bien cocido.
4.- In a frying pan add a spoonful of oil, when it is very hot add the fish, let it brown on both sides over high heat, when it is golden brown add two spoonfuls of water, lower the heat and let it cook for 8 minutes or until we consider it is well cooked.
5.- ¡Listo!, servimos los vegetales y encima colocamos el pescado, decoramos con una rueda de limón y perejil picadito, lo acompañé con papas al vapor. ¡Buen provecho!
