[ENG][ESP]Foodie Contest: Eggplant au gratin with beet and ham sauce -recipe-

I wish you an excellent day, friends, today I join the new FOODIE contest, called by @sirenahippie, this time I bring you some delicious eggplants, we combine the softness of the eggplant with the intensity of the beet and the flavor of the ham, it is an innovative option. Full of flavor, texture and aroma.

I prepared this recipe and I was encouraged because my sister Maria came to visit with my nephews, and we prepared this delicious gratin and colorful lunch as a family.

The original recipe for these eggplants was introduced in America by the Spaniards at the time of colonization, and has transferred its cultivation and the different forms in its various preparations.

I learned how to make this dish by talking to my family who helped me and gave me the idea of the ingredients along with the preparation and combination of the vegetables and sauces.

I decided to participate in this contest with this recipe eggplant au gratin with beet sauce and ham because it represents sharing after so many days if we get together to taste this delicacy in family.

Without further ado, I show you the ingredients and the step by step:

Les deseo un excelente día, amigos, hoy me uno al nuevo concurso FOODIE, convocado por @sirenahippie, esta vez les traigo unas deliciosas berenjenas, combinamos la suavidad de la berenjena con la intensidad de la remolacha y el sabor del jamón, es una opción innovadora. Llena de sabor, texturas y aroma.

Prepare esta receta y me anime porque vino de visita mi hermana María con mis sobrinos, y preparamos en familia este delicioso almuerzo gratinado y colorido.

La receta original de estas berenjenas se introdujo en América por los Españoles en la época de la colonización, y ha trasladado su cultivo y las diferentes formas en su distintas preparaciones.

Aprendí a elaborar este plato hablando con mi familia que me ayudaron y dieron la idea de los ingredientes junto a la preparación y combinación de los vegetales y las salsas.

Decidí participar en este concurso con esta receta berenjena gratinada con salsa de remolacha y jamón porque representa compartir después de tantos días si reunirnos degustamos esta delicia en familia.

Sin más le muestro los ingredientes y el paso a paso:

We will need//Vamos a necesitar

-3 large eggplants
-4 slices of leg ham
-2 beets
-1/2 cup of homemade tomato sauce
-3 garlic cloves
-2 tablespoons oil
-1/2 teaspoon salt
-Enough water
-1/2 teaspoon black pepper
-Mozzarella cheese to taste

To Decorate:

Oregano

-3 berenjenas grandes
-4 lonjas de jamón de pierna
-2 remolachas
-1/2 taza de salsa de tomate hecha en casa
-3 dientes de ajo
-2 cucharadas de aceite
-1/2 cucharadita de sal
-Suficiente agua
-1/2 cucharadita de pimienta negra
-Queso mozzarella al gusto

To begin, turn on the oven preheating it to 180 °C.

In a pot with enough water, place the beets and cook them over high heat until they are soft.

En una olla con suficiente agua, colocamos las remolachas y las llevamos a la cocina a fuego alto hasta que estén blandas.

While the beets are cooking, we are going to prepare the eggplants, on the board we cut the eggplants into slices and place them in a pot with water and salt to help eliminate the bitterness.

Mientras las remolachas están cocinándose, vamos a preparar las berenjenas, en la tabla cortamos las berenjenas en rodajas y las colocamos en una olla con agua y sal para ayudar a eliminar el amargor.

While the time passes, grate the mozzarella cheese.
Chop the leg ham into small squares.
Crush the garlic cloves.

Mientras pasa el tiempo, rallamos el queso mozzarella.
Picamos en cuadros pequeños el jamón de pierna.
Machacamos los dientes de ajo.

In the frying pan place the oil over medium heat, when hot place the garlic and sauté for a few minutes.
Add the ham cubes to the pan and cook for a few minutes over low heat.

En el sartén colocamos el aceite a fuego medio, cuando caliente colocamos el ajo salteamos por unos minutos.

Añadimos los cubitos de jamón a la sartén y dejamos cocinar por unos minutos a fuego bajo.

Once the beets are ready, remove them from the water and remove their skins, place them in the blender and blend until a smooth, disintegrated consistency is obtained.

Next, add the beet mixture.

Add the tomato sauce, stirring to integrate all these ingredients.

Una vez que las remolachas estén listas, las retiramos del agua y les quitamos la piel, las colocamos en la licuadora y las mezclamos hasta obtener una consistencia suave y desintegrada.

Seguidamente, agregamos la mezcla de remolacha.

Agregamos la salsa de tomate, removiendo para integrar todos estos ingredientes.

With the help of a brush we grease the tray with a little oil, we begin to assemble the layers of eggplant slices, at the bottom, then we add a layer of beet sauce, we spread mozzarella cheese on top.

Repeat this process until all the ingredients are used and finish with a layer of sauce and cheese on top.

Con la ayuda de una brocha untamos la bandeja con un poco de aceite, comenzamos a montar las capas de rodajas de berenjenas, en el fondo, luego agregamos una capa de salsa de remolacha, esparcimos queso mozzarella por encima.

Repetimos este proceso hasta utilizar todos los ingredientes y terminar con una capa de salsa y queso en la parte superior.

Place the tray in the oven and bake for approximately 20 minutes, being careful to avoid burning. Once the cheese is golden brown, remove the tray from the oven and let it cool for a few minutes before serving.
