I am visiting my dear daughter who had 2 years without seeing her. So I wanted to experiment with a new preparation. I confess that I was a little scared about how it would turn out, but at the same time very calm and relaxed because of the time I had available to prepare it. With calm and a lot of love, step by step everything turned out delicious. Satisfied with this recipe that I hope to continue preparing.
The amount of ingredients yielded 4 large portions. Here is my step by step.
INGREDIENTS
- 4 medium zucchini
- 700 grams of ground beef
- 400 grams of Mozzarella cheese
- 2 large tomatoes
- 1 large onion
- 10 heads of garlic
- 1 red bell pepper
- 1/2 green bell pepper
- 1 jar of liquid tomato
- Fresh basil sprigs
- Salt to taste
- Pepper to taste
- 1 teaspoon ground Paprika
- Olive oil
- fresh basil leaves
- 1 cup water

PREPARATION
Friends the first thing in this preparation was to organize all the ingredients, utensils and spices. I prepared this recipe with love and care. The first thing was to cut the zucchini lengthwise trying to cut them in thin slices and put a little salt on top. This step is important because it helps the zucchini to lose a little liquid and make it more moldable at the moment of rolling.

The next step was to wash and chop the onion and paprika. Then I proceeded to crush and chop the garlic. I took a frying pan, added olive oil and a minute later I added the onion and paprika to sauté them. Once they gave off their smell, I added the garlic. I mixed carefully and left it for approximately 5 minutes.

Then I added the meat, salt, pepper. Paprika and a splash more of olive oil and mixed my ingredients. While the meat was cooking and taking flavor, I proceeded to cut the tomatoes into small squares and waited 10 minutes and then pour them into the pan, adding also the water. I covered and let it cook at medium low heat for 30 minutes more, stirring frequently.

As the preparation of the meat was the filling for the zucchini rolls, I left it with little liquid. This left it with a pasty consistency suitable for adding to the rolls. The last and quickest thing to prepare was a tomato sauce, since it was already prepared. In this case it was a jar of natural liquid tomato already processed. I loved this one, as it had a thick consistency.
To flavor the sauce, I sautéed the garlic in a small pot with olive oil, added the liquid tomato, salt and pepper and let it cook for 10 minutes. I also added some chopped basil leaves to the sauce. After this time the sauce was ready. Then it was an important step to cut the cheese into thin slices, since I didn't have it sliced.

Once all my preparations were ready, meat, sauce, cheese and zucchini cut, I proceeded to assemble my zucchini rolls. I put some tomato sauce in a large baking dish and turned on the oven to 180 degrees. I placed the zucchini strips side by side but on top of each other as shown in the picture. Approximately 6 strips and I added 2 slices of cheese and a layer of meat that covered almost the total area and proceeded to roll up.

I did this procedure four times. Finally I added the tomato sauce on top of the four zucchini rolls and with the remaining cheese I added on top of my preparation. I baked it in the oven for 45 minutes. It was a delicious and nutritious lunch. It was worth it, my friends.
The combination of flavors was incredible and exquisite. I was fascinated and I felt satisfied for this first time preparing zucchini rolls. I garnished my dish with basil leaves and accompanied my roll with a sweet potato puree with parsley and a touch of olive oil. A great dish. Hola a todos mis queridos amigos de @foodiesbeehive. Deseándoles un felíz fin de semana y disfrutando de deliciosas preparaciones. Hoy les comparto una increíble y exquisita receta de enrollados de calabacín rellenos de carne que les encantará.
Me encuentro visitando a mi querida hija que tenía 2 años sin verla. Por lo que quise experimentar con una nueva preparación. Les confieso que estaba algo asustada por cómo quedaria, pero a la vez muy tranquila y relajada por el tiempo que tenía disponible para prepararla. Con calma y mucho amor, paso a paso todo quedó delicioso. Satisfecha por esta receta que espero seguir preparando.
La cantidad de los ingredientes rindió para 4 porciones grandes. A continuación mi paso a paso.
INGREDIENTES
• 4 calabacines medianos
• 700 gramos de carne molida
• 400 gramos de queso Mozzarella
• 2 tomates grandes
• 1 cebolla grande
• 10 cabezas de ajo
• 1 pimentón rojo
• 1/2 pimentón verde
• 1 frasco de tomate líquido
• Ramitas de albahaca fresca
• Sal al gusto
• Pimienta al gusto
• 1 cucharadita de Paprika molida
• Aceite de Oliva
• hojas de albahaca fresca
• 1 taza de agua
PREPARACIÓN
Amigos lo primero de esta preparación fué organizar todo los ingredientes, utensilios y especies. Esta receta la preparé con cariño y amor. Lo primero fué cortar los calabacines a lo largo trantando que estas quedaran en finas rodajas y les coloqué un poco de sal por encima. Éste paso es importante porque ayuda al calabacín a perder un poco de líquido y hacer más moldeable al momento de enrrollar.
Como siguiente paso, fué lavar y cortar pequeñito la cebolla y pimentón. Después procedí a machacar y cortar el ajo. Tomé una sartén, agregué aceite de oliva y al minuto agregué la cebolla y pimentón para sofreirlos. Una vez que desprendieron su olor, agregué el ajo. Mezclé cuidadosamente y dejé aproximadamente 5 minutos.
Posteriormente agregué la carne, sal, pimienta. Paprika y un chorrito más de aceite de oliva y mezclé mis ingredientes. Mientras se iba cocinando la carne y tomando sabor, procedí a cortar los tomates en cuadritos pequeños y esperé 10 minutos para luego vertírlos al sartén, agregando también el agua. Tapé y dejé cocinando a fuego medio bajo por 30 minutos más mezclando frecuentemente.
Cómo la preparación de la carne era el relleno de los rollos de calabacín, la dejé con poco líquido. Esta quedó con consistencia pastosa adecuada para agregar al enrrollado. Lo último, y mas rápido de preparar fué una salsa de tomate, ya que ésta viene ya previamente lista. Se trató en este caso de un frasco de tomate natural líquido ya procesado. Este me encantó, ya que tenía consistencia espesa.
Para darle sabor a la salsa, sofrei en una olla pequeña el ajo, con aceite de oliva, agregué el tomate líquido, sal pimienta y dejé cocinar por 10 minutos. También agregué a la salsa unas hoja picadas pequeñitas de albahaca. Al cabo de este tiempo quedó la salsa lista. Luego y fué un paso importante cortar en rodajas delgadas el queso, ya que no lo tenía rebanado.
Una vez ya todos mis preparados listos, la carne, salsa, queso y calabacín cortados procedi a armar mis enrollados de calabacín. Coloqué en un refractario grande un poco de salsa de tomate y encendí el horno a 180 grados. Coloqué las tiras de calabacin una al lado de la otra pero encima tal como muestro en la foto. Aproximadamente 6 tiras y agregué 2 rebanadas de queso y una capa de carne que cubriera casi el total del área y procedí a enrrollar.
Realicé este procedimiento cuatro veces. Por último agregué la salsa de tomate por encima de los cuatro enrrolados de calabacín y con el queso restante le agregué por encima a mi preparación. Lo lleve al horno durante 45 minutos. Quedando un delicioso y nutritivo almuerzo. Valió la pena esta preparación amigos.
La combinación de sabores fué increíble y exquisita. Me fascinó y me sentí satisfecha por esta primera vez preparando enrrollados de calabacín. Adorné mi plato con hojitas de albahaca y acompañé mi enrrollado con un puré de batatas con perejil y un toque de aceite de oliva. Un gran platillo. Un abrazo y pronto nos vemos con otra deliciosa y nutritiva receta.
