I love making homemade pasta especially lasagna. Pasta sheets where I live are very expensive and I like to make lasagna with many layers. Adding these extra layers eventually adds up to the bill and lasagna is already expensive without the extra pasta. So, I make my own pasta sheets because it is dirt cheap this way and it is more versatile. I can add different flours which I love to do. See, for example, this post where I added barley flour to make my lasagna.
In any case, it is not easy to measure how much pasta to make; sometimes you end up with more pasta than you wanted. Without really trying, I invented (I think) a new snack. I am addicted to this snack! I have even made pasta just to make this snack. One afternoon I had the random thought of deep-frying or shallow-frying pasta, what would happen? I added some salt, and I was blown away by the awesome taste. Maybe someone has done something similar, but I have not really found anything similar.
The basic method is: I parboil the pasta, cut them into shapes, and shallow fry them until crispy. I put on some salt, pepper, garlic powder, and smoked paprika. And it is that simple. I will share some of the photographs below of how I make them. I hope you give them a try, and if you know of something similar, please let me know!
Cut the Pasta
A very obvious step, first cut the pasta in the desired shapes. I went with some random shapes, but some of them ended up as triangles and look like Doritos or nacho chips.
Shallow Fry
I love to use coconut oil to shallow fry these chips in. For some reason, I think it healthier than other oils, but I think it tastes better. At least to me. In any case, shallow fry them until they are golden but keep an eye on them. They burn very quickly.
Spice up
Be creative with the spices, but the simpler the better. With only salt, they are the best. But I like them with some smoked paprika or garlic powder as well. I guess you can add any spice or flavoring. I want to try them with some parmesan cheese in the future!
Maybe this is a new snack/chip, maybe it is very similar to nacho chips. In any case, these are awesome and addicting. I cannot stop eating them! And by using different flours like barley flour or amaranth flour, you can make them extra healthy! I really hope you give them a try. Enjoy!
