My father loves the texture of cakes made with almond flour and my son loves carrot cakes, so I wanted to make a combination of carrot cake with almond flour and some extra variations, the truth is that with each variation that I was doing to a basic cake recipe to shape this beauty, one or another doubt was born if it would look good, I was also documenting the process, because if it went well I would share it with you and if not I would keep that failure in secret hahaha. As you can see in the pictures, the cake was a complete success, both in texture and in flavor and aromas.

A complete delight to accompany with a good cup of coffee, which was the purpose for which I prepared it, a dough quite flavored with sweet spices that besides adding a particular flavor, infuse it with a lot of aroma, this time I used whole wheat flour that together with the almond flour makes the cake has an extra touch of moisture that is great. I can tell you that whole wheat flour can be replaced by all-purpose wheat flour, rice flour, oat flour or cornstarch for people allergic to gluten. I wanted to add a touch of apple jam, which is also spiced with cinnamon, which adds an extra touch of flavor in addition to moisture. I did not want to add nuts or raisins for My Mathias, but this dough accepts either of the two options without any problem.

A really simple recipe, which this time I made in the air fryer to save time, but we can easily make it in the oven calmly and it will be equally delicious, perfect to accompany with a cream cheese frosting, or we can use an extra touch of Greek yogurt to go with it. Ingredientes

125 gr	Almond flour
125 gr	Whole wheat flour
150 gr	Sugar
75 gr	Apple jam
3	Eggs
100 gr	Greek yogurt
100 gr	Grated carrot
1/2 cup	Milk
1 tsp	Ground cinnamon
1 tsp	Baking soda
1/2 tsp	Ginger powder

Preparation

We will begin by mixing the apple jam with the Greek yogurt and sugar, beat until well integrated and no lumps of sugar are felt, once these ingredients are integrated add the eggs one at a time beating between each one so that the mixture is not cut.

Once the eggs are integrated, add the grated carrot, I grated it finely, but you can grate it as coarsely as you like, on the other hand, mix the whole wheat flour with the baking soda, ground cinnamon and powdered ginger, add half of the whole wheat flour and half of the almond flour and beat, once half of the flours are integrated, add the other half and integrate in the same way.

Once we have integrated the flours, we add the milk, I used whole milk, but you can easily use almond milk, coconut milk or soy milk, now that I think about it, coconut milk should taste very good. Once we have integrated the milk, we pour our mixture into a previously buttered mold, we take it to a preheated oven at 180 °C for approximately 45 minutes or until a toothpick comes out clean and dry, and in the case of making it in an air fryer, we preheat the fryer for about 5 minutes at 200 °C to lower the temperature to 160 °C at the time of introducing the mixture and cook for 20 minutes, or until a toothpick comes out clean and dry.

I must say that this is one of the fluffiest cakes I have ever made, the apple jam and Greek yogurt combined with the flours I used gives it a perfect moisture, I must prepare it again and make a cream cheese frosting because it must taste like glory. Accompanied with a good cup of coffee it is a perfect snack.

We can use substitutes in this recipe, since it is a transformation of a basic sponge cake recipe, we can use butter or cream cheese instead of Greek yogurt; flours can be substituted in the same amount of grams by rice, coconut, common wheat, rice, or oat flours; dried fruits, raisins or dried cranberries are also accepted by this mixture, I used apple jam, but a peach or even orange marmalade should be a success, you want to add nutmeg, ground cloves, or even powdered allspice, it accepts it and suits it very well. Mi padre ama la textura de las tortas hechas a base de harina de almendras y mi hijo ama las tortas de zanahoria, así que quise hacer una combinación de torta de zanahoria con harina de almendras y algunas variaciones extras, la verdad es que con cada variación que le iba haciendo a una receta de bizcocho básico para poder darle forma a esta belleza, nacían una que otra duda de si quedaría bien, de igual forma iba documentando el proceso, ya que si salía bien se los compartía y de lo contrario me quedaría con ese fracaso en secreto jajaja. Como ya ven las fotografías, la torta fue un completo éxito, tanto en textura como en sabor y aromas.

Una completa delicia para acompañar con una buena taza de café, que era el fin con el que la prepare, una masa bastante aromatizada con especias dulces que además de adicionarle un sabor particular, le infunden bastante aroma, en esta oportunidad utilice harina de trigo integral que en conjunto con la harina de almendras hace que la torta tenga un toque extra de humedad que le va genial. Puedo decirles que la harina de trigo integral se puede sustituir por harina de trigo de todo uso, harina de arroz, de avena o fécula de maíz para las personas alérgicas al gluten. Quise adicionar un toque de mermelada de manzana que además está condimentada con canela, lo que le agrega además de humedad, un toque extra de sabor. No quise adicionar frutos secos ni pasas por Mi Mathias, pero esta masa acepta cualquiera de las dos opciones sin ningún tipo de problema.

Una receta realmente sencilla, que en esta ocasión realice en la freidora de aire por ahorrar tiempo, pero que fácilmente podemos realizar en el horno con calma y que de igual forma nos quedara deliciosa, perfecta para acompañar con un frosting de queso crema, o bien podemos usar un toque extra de yogur griego para acompañar. Pero acompáñame y te muestro como la prepare.

Ingredientes

125 gr	Harina de almendras
125 gr	Harina de trigo integral
150 gr	Azúcar
75 gr	Mermelada de manzanas
3	Huevos
100 gr	Yogur griego
100 gr	Zanahoria rallada
1/2 Taza	Leche
1 Cdta	Canela molida
1 Cdta	Bicarbonato de sodio
1/2 Cdta	Jengibre en polvo

Preparación

Tiempo de preparación	10 Minutos
Tiempo de Cocción	20 Minutos en Freidora de Aire / 45 Minutos en Horno Convencional

Comenzaremos mezclando la mermelada de manzanas con el yogur griego y el azúcar, batimos hasta integrar bien y que no se sientan los grumos del azúcar, una vez integrados estos ingredientes agregamos los huevos de uno en uno batiendo entre cada uno para que la mezcla no se corte.

Una vez integrados los huevos adicionamos la zanahoria que ya tenemos rallada, yo en esta oportunidad la ralle por la parte fina, pero pueden rallarlo del grueso que les guste, por otro lado, mezclamos la harina integral con el bicarbonato de sodio, la canela molida y el jengibre en polvo, agregamos la mitad de la harina integral y la mitad de la harina de almendras y vamos batiendo, ya integrada la mitad de las harinas agregamos la otra mitad e integramos de igual manera.

Ya que hemos integrado las harinas, le adicionamos la leche, yo utilice leche entera, pero fácilmente se puede utilizar leche de almendras, leche de coco o leche de soja, ahora que lo pienso con leche de coco debe saber muy bien esto. Una vez que hemos integrado la leche, volcamos nuestra mezcla en un molde previamente enmantecado, llevamos a un horno precalentado a 180 °C por aproximadamente 45 minutos o hasta que al introducir un palillo este salga limpio y seco, y en el caso de hacerlo en freidora de aire, precalentamos unos 5 minutos la freidora a 200 °C para bajar la temperatura a 160 °C al momento de introducir la mezcla y cocinamos por 20 minutos, o hasta que al introducir un palillo este salga limpio y seco.

Debo decir que esta es una de las tortas más esponjosas que he preparado, la mermelada de manzana y el yogurt griego aunado a las harinas que utilice le da una humedad perfecta al mismo, debo volver a prepararla y hacerle un frosting de queso crema porque es que debe saber a gloria. Acompañando una buena taza de café es una merienda perfecta.

Podemos utilizar sustitutos en esta receta, pues partiendo del hecho de que es una transformación de una receta de bizcocho básico, podemos bien utilizar mantequilla o queso crema en lugar de yogurt griego; las harinas pueden sustituirse en igual cantidad de gramos por harinas de arroz, de coco, de trigo común, de arroz, o de avena; frutos secos, pasas de uvas o arándanos secos también son aceptados por esta mezcla, yo utilice mermelada de manzana, pero bien puede servirnos una mermelada de duraznos o incluso de naranja debe ser un éxito, quieres agregarle nuez moscada, clavo de olor molido, o incluso pimienta inglesa en polvo, la acepta y le viene muy bien.
