There is nothing more tasking and draining than the your family asking you
"What are we going to have for lunch?*
No one wants to be put under that pressure of having to think daily and be responsible for what people eat especially when you think of the time spent in making whatever meal has been chosen.
Such was my story yesterday. I decided to make something simple, not too tasking and downright delicious.
RICE AND PALMOIL STEW

Rice is definitely one of the most common food in the world and I think It will be so for a long long time to come.
I mean... Somewhere in the world, someone is always eating rice. So why not me?
MY SIMPLE RECIPE
I wanted to be done with cooking in less than 2hours and I made it so.
For my Rice I simply washed it till my water ran clear and boiled it till it was as soft as I desired it to be.
Not so tasking is it? Exactly!
Now the stew
For the majority of the time, Nigerian stew is made with groundnut oil, virgin oil and more. But when we desire that local feel to the taste, we use Palm Oil.
The taste is always, always different..
1st Step
I have a confession! Now I may have skipped a few steps in recording but what you see below is my finely chopped pepper and onion been fried in Palm Oil.
This I did for 5 minutes tops.
Now, I'm no chef but I fry it till I feel..."Alright that's enough" lol. I make sure nothing is getting burnt or dried up.
2nd Step
I introduce a fine blend of fresh tomatoes and pepper with onion into the pot. This is what makes up the stew and I let it fry nicely along with our onion and pepper from the beginning, yes. We do that..
Now what you want to look out for is getting the water from out tomato blend dried up so it gets for fry really nicely.
This took me 20 to 30 minutes.
When I notice the water starting to dry up I added In my spices.
Palm oil gives the stew a taste on its own that I did not wish to alter so much so I kept the spices as simple as it could be.
3rd Step
Depending on your protein of choice, it can be added to the pot of stew at this point, which Is what I did.
I had beef, and so I just threw it in my pot. Lol.
I let this sit for another 7 to 10 minutes while I check in on my rice that's now perfectly cooked, and I was done!!!

I plate it and enjoy my meal.
Now! I know you wondering, where did the coleslaw come from? Well, ladies and gentlemen, I BOUGHT IT 😂
I was in the mood for it, so why not?
Definitely takes an unfair amount of short time to finish eating, as opposed to cooking. Right?
It's just like money! Takes 30 days to get the paycheck, you get paid and in 48 hours, whoop! All gone!
