Today I am going to share with you an improvised recipe that we made the other day for lunch at home since my mother had made pancakes for a snack the day before and there were some crepes left over for some salty filling. So looking quickly what was in the fridge I got down to work!

El dia de hoy voy a compartirles una receta improvisada que realizamos el otro dia para almorzar en casa ya que mi madre habia hecho panqueques para merendar el dia anterior y habian sobrado algunos creps para algun relleno salado. Asi que mirando rapidamente lo que habia en la heladera me puse manos a la obra!


To start what I did was bone a chicken leg and cut the meat into small pieces
Para comenzar lo que hice fue deshuesar una pata de pollo y corté la carne en trozos pequeños


In a pot with a little oil I began to sauté the following vegetables: garlic, onion, bell peppers, leek and parsley. Sauté the vegetables a bit and immediately add the cubed chicken along with a little salt and pepper
En una olla con un poco de aceite comencé a saltear las siguientes verduras: ajo, cebolla, morrones, puerro y perejil. Saltee un poco las verduras e inmediatamente incorporé el pollo trozado en cubos junto con un poco de sal y pimienta


I seasoned the filling with salt, pepper, paprika, cumin and ground chili. The cooking is in a closed pot so that the chicken and vegetables begin to eliminate their juices and cook in that liquid and absorb their flavors. Approximately we are going to cook it for half an hour, to make sure that the chicken does not remain raw.
Condimenté el relleno con sal, pimienta, pimenton, comino y aji molido. La coccion es a olla cerrada para que el pollo y las verduras comiencen a eliminar sus jugos y se cocinen en ese liquido y absorban sus sabores. Aproximadamente vamos a cocinarlo por media hora, para asegurarnos que el pollo no quede crudo.
As I said, my mother already had some pancakes previously cooked the day before when they had pancakes with my niece and they didn't invite me :( haha so we're just going to wait for the filling to cool down to start filling the cannelloni.
Como dije mi madre ya tenia unos creps cocidos previamente el dia anterior cuando merendaron panqueques con mi sobrina y no me invitaron :( jaja asi que simplemente vamos a esperar a que el relleno se enfrie para comenzar a rellenar los canelones.
The cannelloni filling is simple, it doesn't have much science, you just put a little filling on the edge of the crepe and roll it to one side. In this case I put a piece of cheese, if you don't have cheese at home there is no problem, I am one of those people who love cheese and usually add it to everything, but I also think that it covers up the flavor a lot and it is not really necessary. so I leave it to your liking!
El relleno del canelon es sencillo, no tiene mucha ciencia, simplemente colocas un poco de relleno en el borde del crep y lo enrollas hacia un lado. En éste caso coloqué un trozo de queso, si no tienes queso en tu casa no hay problema, yo soy de esas personas que aman el queso y suelen agregarselo a todo, pero tambien creo que tapa mucho el sabor y no es realmente necesario. asi que lo dejo a tu gusto!


While I was rolling the cannelloni the sauces were beginning to cook, we made a simple tomato sauce with some condiments, and a sauce of cream cheese and reggianitto cheese with green onion.
Mientras enrollaba los canelones las salsas comenzaban a cocerse, hicimos una salsa de tomate simple con algunos condimentos, y una salsa de queso crema y queso reggianitto con cebolla de verdeo.
In an oven-safe dish, place all the cannelloni in a tomato sauce base and then place the sauces on top.
En una fuente apta para horno colocamos todos los canelones en una base de salsa de tomate y luego intercalamos las salsas en la parte superior.
Finally a rain of reggianito cheese and baked until the cheese gratin

and that's it! your cannelloni are ready. The filling was super delicious, and for having been improvised it was very successful, we all liked it and it is probably a good option to repeat and not fall back on the usual filling: ricotta with spinach.
