Greetings dear friends, welcome to my blog. Today I am once again joining the weekly contest Qurator's: Hive Top Chef! | Squid. I was very excited to see this contest because squid is one of my favorite seafood dishes. I had squid and shrimp at home, so I thought I'd add another ingredient to make a delicious stew.
To complete the ingredients for the asopado, I went to the market to buy mussels. They're also one of my favorite seafoods, with a deliciously tender flesh. I'd never made asopado before, especially when I'd eaten it in some restaurants. Now it was my turn to make it to my liking.

In some versions of asopado, they prefer to cook the rice alongside the seafood soup, but I preferred to cook the al dente rice separately and serve it at the end. For my first asopado, it was delicious.
Ingredients
- 150 grams of squid
- 200 grams of shell-on shrimp
- 130 grams of mussels
- 2 onions (70 grs)
- 2 cloves of garlic
- 40 grs red bell pepper (170 grs)
- 50 grams of sweet chili
- 1 carrot (60 gr)
- 1 teaspoon paprika
- 3 teaspoons dried oregano
- 1 teaspoon of paprika
- 1 teaspoon of cumin
- 1 teaspoon of curry
- Salt and pepper to taste
- 5 cups of water
Preparation
1.-. Wash and clean the squid and shrimp. Remove the head, tail, and intestines from the shrimp, along the back and belly (underside). Remove the head, feather, ink, and viscera from the squid, then cut them into rings.
2.-. We reserve the shells, tails and heads of the shrimp to prepare the broth.
3.- We season the seafood with salt and store it in the refrigerator while we prepare the broth for the stew.
4.- Remove the skin from the onions, the two garlic cloves, and the carrot, as well as the seeds and stems from the chilies and the paprika. Wash and cut them into medium-sized pieces and then place them in a pot with 5 cups of water.
5.- Add the shrimp shells, heads, and tails, salt to taste, and half of the dried oregano. Let it boil until the ingredients soften. Adjust the salt. Turn off the heat and let it sit for about 10 minutes.
6.- We put the soup with all the ingredients in the blender and blend for a few seconds.
7.- We strain the soup, pour it into the pot and add the rest of the seasonings.
8.- Add the seafood and a pinch of salt (it's recommended to adjust the salt content). Let it boil for 5 minutes and turn off the heat. Let it rest for a couple of minutes and serve.
