I love my fast easy cook!
Let me show you my fast easy cook, all thanks to my mum who gave me the 'magic' flour for cooking anything fried. We could not find this at usual supermarket, but only a particular shop at Selayang where my mum's sister is currently staying. My mum bought some for herself and bought for me too. I will show you below as I continue typing.
Because of this premade flour, even a chef like me who do not like frying stuff will also attempt to fry some time.
The mood magically appeared too and so I quickly made this before the mood disappeared. For your information, I really dislike frying whether it is frying fish or chicken or prawns because a lot of work is needed after that to clean the kitchen and also whole house will smell like just being fried. But, occasionally I do try to because the rest in the family love fried food especially the children.
I made fried turmeric chicken slices!
Ingredients needed:
- frying oil
- chicken fillet, cut into shorter strips
- 1 teaspoon of turmeric powder
- 1 egg
- the 'magic' flour
Steps:
I used this organic turmeric powder, also bought by my mum. Looks like my mum loves to make me a better chef. After that, I found that this brand of turmeric powder is nicer.
Add one teaspoon of turmeric powder and mix it with the chicken strips/slices. I love to use my hands to feel along. Ensure the hands are clean though. I do know when we cook for public, we should wear gloves. But the intention here of using hand is so that I can feel the food I cook. Since I am cooking for my own family, and I make sure I wash my hands clean, so I skip using gloves altogether.
Crack one egg into the chicken turmeric and also mix well. Let it marinade awhile for about 20-25 minutes. The egg does help to soften the chicken meat too.
This is this 'magic flour' introduced by my Selayang aunty to my mum and my mum introduced to me. It certainly beats the same heartbeat as mine — EASY COOK brand. That sounds so Jade. Haha. I love it. This is the fried chicken flour I use and I will not use other brand anymore. But, if you are a pro in mixing flour with other ingredients to make a fried chicken flour, you may go ahead. Perhaps you want to add other ingredients like herbs and spices, you may do so. For me, I shall only use this to simplify the steps since I am not a pro chef.
Pour a generous amount of the flour into a flat plate and start to coat the chicken strips one by one, ensuring all surface area being coated well.
In a frying pan, heat up the oil till hot enough. Do not start frying if the oil is not hot enough or else the flour will stick to the pan. You may test by putting a wooden chopstick (if you have) into the oil, and there is bubble around the chopsticks. Or just use the basic skill by feeling along with your palm on top of the oil, 5cm away.
Then, put in the strips of chicken one by one into the frying oil, space them out apart.
Fry till both sides turn golden brown.
Take them out of the pan and lay the fried chicken on kitchen towel to absorb the oil. If you have oil drainer, that's even better. This reminds me that I need to go get one soon.
There you have it, yummy crispy turmeric fried chicken slices. I purposely cooked this for the boys so that happily ate as finger snacks. These are way healthier than the frozen and processed one because you also know what oil you use and we certainly use fresh new oil, although occasionally I do buy the frozen ones for even faster cook.
