Ingredients
- 110g soft butter (half cup)
- 3/4 cup granulated sugar (150g)
- 2 eggs
- 1 teaspoon vanilla powder or extract
- 1 and 1/4 cup all purpose flour
- 3/4 cup shredded coconut
- 1 tbsp baking powder
- Pinch of salt
- 1/2 cup milk
for Chocolate ganache
- 100g White chocolate (cut into small pieces)
- 1/4 cup hot heavy cream
For Decoration(optional)
- Coconut flakes (optional)
- 100g melted White chocolate
- Salted sticks
- Candies
Instructions
1- Prepare cupcake mold by placing cupcake lineres, preheat oven at 180c.
2- In a large bowl mix the butter with sugar, add 2 eggs one at a time and mix and the second egg with vanilla and mix.
3- Add sifted flour with baking powder and salt with half amount of milk. Mix all together until smooth batter.
4- Add shredded coconut with the remain milk, mix until ready batter. With spatula be sure all the ingredients well incorporated.
5- With an ice cream scoop, spoon the batter and fill the cupcake lineres.
6- Clean any drops with a kitchen paper towels.
7- Bake in preheated oven at 180 C/356F for 25 minutes or until golden top.
8- Cool cupcakes on a wire rack before decorate.
9- Heat cream, then pour on the white chocolate. Set for a minute then stir until smooth ganache.
10- Dip cupcake in the chocolate ganache then sprinkle coconut flakes.
11- Melt white chocolate in microwave for 1 minute, stir until smooth melted chocolate. Fill chocolate in parchment paper bag. On a sticks make a shape of lines as christmas tree. decorate with candies. Chill for hour.
12- Insert sticks tree at the middle of each cupcake.
