Cucumber Pasta And The Left Overs For 15 February 2023
What would you do if you only had a few foods at home to make them ideal for a meal? Just be creative š .
While many celebrated Valentine's Day with their loved ones, friends, and family, I chose to stay home, binged-watch, and cooked food. The Chinese family left the house, as I was informed in the morning, and they did so for the entire day. I was left home alone, which I liked even better. Then my male boss instructed me to consume the vegetables in the refrigerator. I was hoping for leafy ones, but all I saw were chestnuts, a pack of baby corn, and a lotus root. Meanwhile, a tetra pack of tomato soup was present in the pantry. I was thinking about how I would eat them for lunch.
I considered making pasta or macaroni when I first saw the soup, but I decided against it because we don't have any, hehe. I was too lazy at that point to go to the market and buy some food. After washing them, I decided to toss them all into the pan and add the tomato soup. Even though it was completely unexpected, the food was tasty and allowed me to forgo buying lunch.
I finished them all in one sitting, lol, whether you believe me or not. Throwing away the leftover sauce would then be a waste. Once more, I considered pasta as a solution for the sauce. However, since I was planning to buy a cake and don't want to have more food with gluten, I thought about buying a vegetable that doesn't need to be cooked and that I could make into pasta. Carrot was my first thought, but it's hard when raw, so I chose a soft, green alternative, which was cucumber. At that point, I decided to add some cherry tomatoes as toppings. This was prepared for my dinner on Valentine's Day.
I found out that we still have some leftover chicken from the previous night after checking the chiller. It seemed like the ideal complement to the cucumber pasta. The preparation was incredibly quick and simple. My dinner was done in less than five minutes.
I felt like I'm eating in a restaurant even though the cucumber, cherry tomatoes, and strawberry cake only cost less than $5. I still have some mochi that I purchased the other day for my snacks which I added to the table. I enjoyed eating them while watching a movie.
The cherry tomatoes, which I couldn't finish, were saved for my breakfast the following morning with the naked cucumbers. Then I checked if my avocados (which I bought along with the mochi) were ripe enough to be consumed, and yes, they were. Cucumber, cherry tomatoes, and avocado for breakfast were a truly great and healthy combination.
We don't really need to spend a lot to give ourselves a fancy-looking meal. Moreover, the leftovers shouldn't be wasted. We just need to be creative š.
