On May 24th I diverged and had chicken for a change
I've been watching Jaime Oliver's 30 min meals.
That guy is amazing.
Using his suggested technique, I took that chicken (thighs) from raw to cooked, well all of it from raw to cooked in under 40 min.
Organic long grain rice, herbed tomatoes (again sadly, canned) and the very spiced chicken herbs from my garden. It were delicious.
On May 26 th this was my supper. The only thing homegrown there was the rosemary you can see, and other herbs you can't see.
I got this technique off the interweb (ha ha) where you dry the meat (of course) then rub in Salt and Pepper (rather heavily) on both sides.
Have butter and herbs ready to go, put the meat in an iron skillet (hot) so that it quickly browns on both sides, turn it down, add the butter and herbs (in this case, fresh from my garden, basil, rosemary and thyme, with some bottled chopped garlic I have)
When turned down, put in the butter etc let the herbs fry briefly, then tilt the pan so the butter (about 2 Tablespoons) and herbs pool on the downhill side so you can spoon it over the meat.
It finishes the cooking with the hot herbed butter!
DELISH!
The greens you can see were storebought Mustard greens, but fresh and I washed, roughly chopped and cooked them with bacon fat and 2 slices of bacon. Left them a little more tough than my mama would have liked.
The 'maters were canned, but with added Basil and herbs
Last night I ate the leftovers from several previous meals, plus a salad all fresh picked.
Romaine Lettuce
With Radish greens,
basil, Squash Blossoms and (store bought) tomatoes.(There are a couple of small pieces of fresh straightneck squash hiding in there; I knew that piece wouldn't get any bigger in the shade of the leaves so I picked it)
I been eatin' good y'all!
I needed the nourishment too! Hard at work around the garden
I finally got around to fixin' (but not completely finished yet) the steps into the studio
Cat approved even before I'd finished
He likes the little tunnel, he can take shelter from the birds
I put up a doohicky to wind cords around
Assembled a Cat Climbing Gym from stuff I had here
(He'd rather dream of catching a bird from the feeder, or even better come inside and take his frustrations out by attacking my legs)
So;
