Some kids call Broccoli small green trees that they refuse to eat as no one in their right mind eats trees!
Broccoli the Superfood
This cruciferous vegetable is closely related to Cabbage, Brussels sprouts, Kale and Cauliflower, and is a nutritional bullet high in vitamins, minerals, fiber and antioxidants.
It is a cancer-preventative, reduces inflammation, regulates blood sugar, is high in Vit C therefore boosts immunity and it also helps with heart health.

Come into my kitchen and see what we can cook up with Broccoli that the kids will eat without complaining about trees!
This dish will make them lick their fingers afterwards with it's deliciously creamy piquant sauce where all the Broccoli florets can hide away.
What is required?
- 1 Broccoli, broken into florets and parboiled
- 600 gram Chicken fillets
- 1 Onion
- 1 Lemon/ Lime
- Fresh Herbs - Rosemary & Thyme
- 250ml Fresh Cream
- 200ml Mayonnaise
- 1 pkt Cream of Chicken or Mushroom Soup Powder
- 5ml Curry Powder (I used wet leaf Masala)
- 1/2 cup dry Breadcrumbs
- 1 cup grated Cheese
Marinade chicken fillets in lemon juice and herbs.
Sautee sliced Onion in a little Olive Oil, add Chicken fillets & brown.
Cook with lid on till fillets are lightly cooked but still pink inside.
Cube Chicken, add to onions and Broccoli, spoon into oven dish.
Mix Cream, Mayonnaise, Curry Powder & Soup Powder, spoon over Broccoli mix.
Sprinkle cheese and breadcrumbs over, place in 180° oven for 25 minutes till nicely brown on top.
Serve with wild brown Rice & Sun-dried Tomatoes.

With this Creamy Broccoli & Chicken Bake however, not one Broccoli floret ever stays behind on anyone's plate!
