I hope you are all very well. This time I want to share my recipe for homemade peanut butter cookies. I hope you will agree that their soft but crunchy consistency make them ideal for any cookie lover.
These cookies are ready in an instant. In just 10 minutes you can bake them and then you will see that they cool down in no time.
To make approximately 360 grams of dough (24 cookies), I used:
60 gr peanut butter
1/2 cups sugar
1 egg (M)
120 gr all-purpose flour
1/2 teaspoon baking soda
1 tablespoon vanilla essence
You won't believe how manageable this dough is thanks to the peanut butter; it's very easy to make and only takes 5 other ingredients that you can easily find in your kitchen.
Peanut butter has become very popular among Venezuelans and you can buy it in many supermarkets for about $10 per kilo. Peanut butter will provide a very pleasant aftertaste and, in addition, you can satiate those cravings for a tasty cookie with just one--or two.You will only need 60 grams to make two dozen cookies.
Mix well the peanut butter, sugar, and egg in a bowl.
Mix everything for a couple of minutes, until you can't feel the sugar. This ensures that the texture is softer, so that the cookie will be crunchy instead of hard.
You'll only need a few utensils, 3 or 4; you won't get your hands too dirty either. You can mix all the ingredients with the same paddle.
Then sieve the flour in a separate bowl and mix it with the baking soda. Add this mixture into the first one.
You will get 360 grams of dough, enough for 24 cookies.
You can knead with the help of a paddle, making downward pressing movements.

Continue to mix everything well until the dough is ready.

The consistency is smooth and peels off easily from the hands.

This dough can be used immediately. If you are going to store it, be sure to cover it or it will dry out.
Time to shape and decorate our cookies.
Form 24 balls and press them in the center with the dried fruit. Place the cookies on a greased baking pan and bake them x 30 minutes at 300°F.
I also used white chocolate chips. Not my favorite, but my niece likes them.
We were happy with the result! They cooled in less than 10 minutes.
