Falafel wit yogurt sauce/ Falafel con salsa de yogurt [EN/ES]

During the COVID-19 pandemic I spent a lot of time learning new things 🤓, that's how I learned the recipe I bring you today. In Cuba we say that "if there is no bread, cassava"💁, as a way of looking for the alternative to achieve what we want.

Falafel is a Middle Eastern recipe that has become quite popular in recent times. As I have learned, it can be made from various grains, but most commonly from chickpeas or fava beans. In Cuba I used to make it with yellow peas and everyone loved it. Today I wanted to try to make this recipe as close to the original and I hope you like it.

For the falafel

• Chickpeas, 500 g
• Salt, 1 tsp
• Pepper, 1 tsp
• 1 tsp parsley
• Garlic, 2 tsp
• ½ cup chopped onion
• 100 g sesame seeds
  For the sauce
• 3 tbsp unsweetened white yogurt
• 1 tbsp mustard
• 1 tbsp honey

The first thing to do is to soak the chickpeas in enough water. We must take into consideration that they will hydrate and their volume will increase twice or more. Every 12 hours the water should be removed and replaced with clean water, I recommend doing this three to four times, that is, soaking for 36 to 48 hours in total.

Once they are well hydrated, drain the water and put the chickpeas in the blender, along with the garlic, sesame seeds, salt and onion. You can also use a food processor or other machine that allows you to obtain a homogenous paste. I like to leave some of the grains unground because they add texture to the falafel. In the blender it may be necessary to add a little water so that it integrates well, but 🤞be careful not to put too much so that the dough does not become liquid. After the chickpeas have been processed, add the pepper and parsley and integrate everything.

When the mixture is ready, just fry the falafel giving it the shape you like. The common thing is to form balls, but I like to shape them with two spoons, they look like rugby balls 🏈. Fry in very hot oil until the falafel are golden brown and ready to eat.

If you like you can accompany them with a very simple yogurt sauce. This sauce is made by mixing all the ingredients that I left before until they are integrated and it really combines well with the falafel.

I recommend making a lot of batter 👉👈 and save the one you are not going to eat during the day, you will surely want to repeat ❤️. This batter keeps well in the refrigerator for a week. I hope you liked it and enjoy it.

Durante la pandemia de COVID-19 dediqué mucho tiempo a aprender cosas nuevas 🤓, de esa manera aprendí la receta que les traigo hoy. En Cuba decimos que “si no hay pan, casabe”💁, como una manera de no dejarnos matar (🤣🤣), o sea que buscamos la alternativa para lograr lo que queremos.

El falafel es una receta de Medio Oriente que se ha vuelto bastante popular en los últimos tiempos. Según he aprendido, se puede hacer de diversos granos, pero lo más común es que sea de garbanzos o habas. En Cuba los hacía con chícharos amarillos y a todos les encantaba. Hoy quise tratar de hacer esta receta lo más cercana a la original y espero que les guste.

Para el falafel
• Garbanzos, 500 g
• Sal, 1 tsp
• Pimienta, 1 tsp
• Perejil, 1tbsp
• Ajo, 2 tsp
• Cebolla picada, ½ taza
• Ajonjolí, 100 g
Para la salsa
• Yogurt blanco sin azúcar, 3 tbsp
• Mostaza, 1 tbsp
• Miel, 1 tbsp

Lo primero que debemos hacer es poner a remojar los garbanzos en agua suficiente. Debemos tener en cuenta que se hidratarán y su volumen aumentará dos veces o más. Cada 12 horas se deberá desechar el agua y sustituir con agua limpia, recomiendo hacer esto de tres a cuatro veces, o sea remojar por 36 a 48 horas en total.

Una vez que estén bien hidratados se drena el agua y se ponen los granos en la licuadora, junto con el ajo, ajonjolí, la sal y la cebolla. También puedes usar una procesadora de alimentos u otra máquina que permita obtener una masa homegénea. A mí me gusta dejar algunos granitos sin moler por completo pues añaden textura al falafel. En la licuadora puede ser necesario agregar un poco de agua para que se integre bien, pero 🤞cuida no ponerle demasiada para que la masa no quede líquida. Luego que se haya procesado los garbanzos se añade la pimienta y el perejil y se integra todo.

Cuando la masa esté lista solo resta freír el falafel dándole la forma que más te guste. Lo común es que se formen unas esferas, pero a mi me gusta más darles forma con dos cucharas, quedan como pelotas de rugby 🏈. Se debe pasar a freír en aceite bien caliente hasta que estén doraditos los falafel y están listos para comer.

Si te apetece puedes acompañarlos con una salsa de yogurt bien sencilla. Esta salsa se hace mezclando todos los ingredientes que les dejé antes hasta que se integren y realmente combina muy bien con los falafel.

Recomiendo hacer mucha masa 👉👈 y guardar la que no vas a comer en el día, seguro vas a querer repetir ❤️. Esta masa se conserva bien en el refrigerador por una semana. Espero que les haya gustado y la disfruten.
