Marbled cake with arequipe topping [ENG/ESP]

Today I come by this community, to share with you a recipe for a delicious marbled cake, covered with a delicious dulce de leche or arequipe, I prepared it to surprise a very dear friend who had a birthday. It was very fluffy, its aroma super nice and a very soft texture, the vast majority of people tend to like it, it is used for different meetings and sharing of all occasions; the flavor presents and the showiness to chop it together with its aroma that are characteristics that make it a rich cake to lick your fingers.

Friends at this time I share with you the ingredients and the step by step of the recipe, both for the cake and the decoration, which by the way is left, I should mention that I have learned to make several types of cakes thanks to the baking courses I have done years ago and that these last years I have put into practice, however each recipe adapting it to my mind and taste. I used a 20 centimeters by 10 centimeters high mold, it yields for 22 people:

Ingredients Cake:

5 cups of leavening flour
4 cups of sugar
350 grams of margarine
5 eggs
1 cup of milk
1 and ½ tablespoons of white vinegar (mix the milk with the vinegar to make the buter milk)
1/2 teaspoon of salt, 1 teaspoon of baking soda * 1 cup of liquid milk
1 cup of liquid milk
2 tablespoons vanilla
orange zest and 1/4 ml orange juice
6 tablespoons of cocoa
250 grams of arequipe or dulce de leche * 250 grams of caramel or dulce de leche

Preparation of the cake

1.In a bowl place the margarine, cream, add 3 and 1/2 cups of sugar, continue beating until it is well creamed, it should take white color, add the egg yolks one by one and stir, until a thick mixture is formed.

2.In another container sift the flour, add the baking soda, salt, unite them and add to the mixture containing the sugar, margarine and egg yolks, stir until everything is well integrated, add the milk, vanilla, grated lemon zest and stir in an enveloping way.

Beat the egg whites until stiff and add ½ cup of sugar, beat, add to the bowl containing all the preparation, stir with wrapping movements until everything is united. Divide into two equal parts, to one part add 6 tablespoons of cocoa powder sifted through a sieve and the other half of the vanilla mixture reserve.

Place in the mold previously greased, add a layer of vanilla mixture, then a layer of cocoa mixture and so on until the end, you must finish with the vanilla mixture, pass a stick height to all the mixture and make figures, finally cook at a temperature of 170 degrees Celsius for 45 minutes, then lower, let cool for two hours.

Covering and Decoration

I covered the whole cake with arequipe, place the decoration you want, in my case I had some pink and white badercream and decorate with small pink and white pompoms, and finally I finished my decoration by adding white, pink and mint green mini dragees.

I tell you that this cake was really delicious, everyone loved both the taste and the decoration.

Hoy paso por esta comunidad, para compartirles una receta de un delicioso pastel marmoleado, cubierto con un delicioso dulce de leche o arequipe, lo prepare para sorprender o a una amiga muy querida que estaba de cumpleaños. Quedo muy esponjoso, su aroma súper agradable y una textura muy suave, a la gran mayoría de las personas suele gustarles, es utilizado para diferentes reuniones y compartir de toda ocasión; el sabor presenta y la vistosidad al picarla conjuntamente con su aroma que son características que lo hacen ser un rico pastel para chuparse los dedos.

Amigos en este momento le comparto los ingredientes y el paso a paso de la receta, tanto para el biscocho como lo que es la decoración, que por cierto quedo, debo mencionar que he aprendido hacer varios tipos de tortas gracia a los cursos de repostería que he realizado hacen años atrás y que estos últimos años los he puesto en práctica, sin embargo cada receta la adaptando a mí parecer y gusto. Utilice un molde de 20 centímetros por 10 centímetros de alto, rinde para 22 comensales:

Ingredientes Bizcocho:

5 tazas de harina leudante
4 tazas de azúcar
350 gramos de margarina
5 huevos
1 taza de leche
1 y ½ cucharada de vinagre blanco (unir la leche con el vinagre para hacer el buter milk)
1/2 cucharadita de sal, 1 cucharadita de bicarbonato
1 taza de leche liquida
2 cucharadas de Vainilla
Ralladura de naranja y 1/4 ml de jugo de naranja
6 cucharadas de cacao
250 gramos de arequipe o dulce de leche

Preparación del Bizcocho

1.En un tazón colocar la margarina, cremar, agregar 3 y 1/2 tazas de azúcar, seguir batiendo hasta que esté bien cremada, debe tomar color blanco, colocar las yemas una a una y revolver, hasta formar una mezcla espesa.

2.En otro envase cernir la harina, agregar el bicarbonato, la sal, unirlos e ir agregando a la mezcla que contiene el azúcar, la margarina y las yemas de huevo, revolver hasta integrar todo muy bien, agregar la leche, la vainilla, ralladura de un limón y revolver en forma envolvente.

3.Batir a punto de nieve las claras de huevo y agregar ½ taza de azúcar, batir, agregar al tazón que contiene toda la preparación, revolver con movimientos envolventes hasta unir todo. Dividir en dos partes iguales, a una parte agregar 6 cucharadas de cacao en polvo cernidos por un colador y la otra mitad de la mezcla de vainilla reservar.

4.Colocar en el molde previamente engrasado, se va agregando una capa de la mezcla de vainilla, luego encima una capa de la mezcla de cacao y así sucesivamente hasta terminar, se debe terminar con la mezcla de vainilla, pasar un palito de altura a toda la mezcla y hacer figuras, por ultimo cocinar a una temperatura de 170 grados centígrados por 45 minutos, luego bajar, dejar enfriar durante dos hora.

Cubierta y Decoración

Cubrí todo el pastel con arequipe, colocar la decoración que desee, en mi caso tenía un poco de badercream rosado y blanco y decore con pequeños pompones rosados y blancos, además por ultimo termine mi decoración agregándole mini grageas blancas, rosadas y verde menta.

Les cuento que realmente este pastel quedo muy delicioso, a todos les encanto tanto el sabor como la decoración.

El procedimiento para elaborar el badercream, yo se los explique en otro post el año pasado.
