Today I come to tell you how I prepared a delicious lunch @zupasteleria style, preparing several things that she likes, so she was helping in the kitchen.

I decided to prepare some smoked chops accompanied by Zu style Arabic rice and my wife's favorite salad. Generally this is the style of dishes that I like the most, a protein, the side dish which is almost always rice and a salad with something green which in this case she chose.

I started to prepare the rice and the first thing I did was to fry the angel hairs in a pan with half a cap of olive oil until they were brown enough, then I grated a carrot and as is my habit when I see that I already put too much carrot I eat the rest.

Then for the rice, I fried a clove of garlic with two cups of rice with a drizzle of olive oil until they browned a little, then I poured in the pot 4 cups of water, with a squeeze of lemon and a little salt. I like my rice low in salt. When the water boiled I added the grated carrot and the angel hairs and set the temperature to low heat, I kept stirring everything so that it could cook evenly until the rice reached the right point, which was approximately 10 minutes later.

Then we started to make the salad and for that we put the broccoli in boiling water for 5 minutes and then set it aside. Then I washed half an apple, a little bit of cilantro, a little bit of parsley, a tomato and an onion with water and a splash of vinegar. I rinsed and cut everything into julienne strips except the apple which I cut into small squares, I also cut the cilantro and parsley and I also cut a few dehydrated blueberries into smaller pieces, I put everything in a bowl where Zu had previously put the broccoli. The sweet touch of the apple and the cranberries gives a very special flavor to this salad that I recommend you to make. Zu was in charge of dressing the salad with salt, lemon and an aquafaba mayonnaise inspired by @eugelys recipe. It was spectacularly delicious.

Finally it was time for the smoked chops, which I seasoned with two cloves of garlic, salt, oregano and a little olive oil. I spread the seasoning all around and then I heated the pan over high heat and when I placed the chops I let them cook over medium low heat. Since they are smoked, they are done in a short time so I just had to make sure they had a beautiful golden color and flip them so they were even. This is the first time we use these smoked chops for this dish, most of the time we use fresh chops and this time they turned out great so from now on these chops will be the ones we will use.

When the chops were ready I served everything on the plates and here you have the final result. A very tasty, balanced dish that we want to repeat, the bones of the chops were very clean because they were enjoyed so much. When we cook together the food is much better and everything is done faster.

Hoy les vengo a relatar como preparé un rico almuerzo al estilo @zupasteleria, preparando varias cosas que a ella le gustan, por lo tanto ella estuvo ayudando en la cocina.

Decidí preparar unas chuletas ahumadas acompañadas de arroz árabe al estilo Zu y la ensalada favorita de mi esposa. Generalmente este es el estilo de platos que más me gustan a mi, una proteína, el acompañamiento que casi siempre es arroz y una ensalada con algo verde que en este caso lo eligió ella.

Comencé a preparar el arroz y para ello lo primero que hice fue freír los cabellos de ángel en una sartén con media tapa de aceite de oliva hasta que se doraran lo suficiente, luego rallé una zanahoria y como es mi costumbre cuando veo que ya le puse mucha zanahoria me como el resto.

Luego para el arroz, sofreí un diente de ajo con dos tazas de arroz con un chorrito de aceite de oliva hasta que se doraran un poco, seguidamente eché en la olla 4 tazas de agua, con un chorrito de limón y un poquito de sal. A mí me gusta el arroz bajo en sal. Cuando el agua hirvió eché la zanahoria rallada y los cabellos de ángel y le puse la temperatura a fuego bajo, fui revolviendo todo para que se pudiera cocinar de forma uniforme hasta que el arroz llegara al punto adecuado que fue aproximadamente 10 minutos después.

Luego comenzamos a hacer la ensalada y para ello pusimos el brócoli en agua hirviendo por 5 minutos y luego lo reservamos. Después lavé media manzana, un poquito de cilantro, un poquito de perejil, un tomate y una cebolla con agua y chorrito de vinagre. Enjuagué y corté todo en julianas menos la manzana que corté en cuadritos, también corté el cilantro y perejil y además corté unos pocos arándanos deshidratados en trocitos más pequeños, puse todo en un bowl donde previamente Zu había puesto el brócoli. El toque dulce de la manzana y los arándanos le da un sabor muy especial a esta ensalada que les recomiendo hacer. Zu se encargó de aliñar la ensalada con sal, limón y una mayonesa con aguafaba inspirada en la receta de @eugelys. Le quedó espectacularmente deliciosa.

Finalmente llegó el turno de las chuletas ahumadas que aliñé con dos dientes de ajo, sal, orégano y un poquito de aceite de oliva. Le unté muy bien los aliños alrededor y luego puse a calentar la sartén a fuego alto y al colocar las chuletas dejé que se cocinarán a fuego medio bajo. Por ser ahumadas se hacen en poco tiempo así que solo había que vigilar que tuvieran un color dorado hermoso y voltear para que estuvieran parejas. Es la primera vez que usamos estas chuletas ahumadas para este plato, la mayoría del tiempo usamos chuletas frescas y la verdad esta vez quedaron estupendas así que de ahora en adelante estas chuletas serán las que usaremos.

Cuando las chuletas estuvieron listas serví todo en los platos y aquí tienen el resultado final. Un plato bien rico, balanceado y que queremos repetir, los huesitos de las chuletas quedaron muy limpios de tanto que fueron disfrutados. Cuando cocinamos juntos la comida queda mucho mejor y se hace todo más rápido.
