How to Easily Make Traditional Acehnese Catch Chicken

Hi foodie lovers, this time I will invite you to prepare one of the traditional dish recipes from my region Aceh. I've been wanting to share this recipe with you for a very long time but finding the ingredients I want is enough to make me dizzy. Actually, the original recipe for this chicken is processed from native chickens, not boiler chickens. But because now my chicken is still very small, so I need a long time for that.

Culanary Aceh Ayam Tangkap

Captured chicken is the name of this dish, this chicken is processed with abundant herbs so that it gives a strong and distinctive aroma when enjoyed. The marinade is actually quite simple but it is quite influential in getting the perfect result.

I picked the aromatic herbs in my yard, I did prepare these herbs before I processed them. Picking in the yard of a house that thrives there see I picked quite a lot, I think I will store some of it in the refrigerator later.

Curious about the recipe, here are the preparation steps.

Ingredients Needed

Chicken Marination Ingredients

300 gram chicken
2 cloves shallots
1 clove garlic
½ teaspoon coriander
2 cm turmeric
1 hazelnut
1 star anise flower segment

Aromatic Ingredients

5 pandan leaves
5 curry leaves
1 turmeric leaf
5 green chilies
1 lemongrass stick
1 shallot clove
4 lime leaves

Making Procedure

Cut the chicken into small pieces or according to taste, here I prefer small pieces so that the spices are more fully absorbed.

Add the juice of 2 kasturi oranges in the chicken meat that has been cut and a teaspoon of salt.

Then the marinade is mashed and added to the chicken pieces. Marinate for about 30 minutes at room temperature or you can put it in the refrigerator.

Then fry with hot oil after half cooked add the aromatic ingredients that have been cut into small pieces. Then fry until brownish yellow on low heat so that the chicken is cooked evenly.

Result

Ayam tangkap is ready to be served, in Aceh itself ayam tangkap is usually enjoyed as a side dish with warm white rice. It is served on big occasions such as celebrations at home or even you will find a lot of this culinary in restaurants that sell Acehnese specialties.

The chicken is very tasty, the aroma of spices and also the aromatic leaves make this chicken irreplaceable. It's very soft and cooked even without being cooked first. Now my advice is to make it a little smaller like this so that the spices fit and cook evenly. The aroma when in gorenf alone can spread throughout the house and even smell to the neighbor's house is very strong and distinctive.
