After the start of my pumpkin seeds experiment yesterday, here I am today to share the recipe I did with the pumpkin!
Gratin is so famous in Mauritius, you can make it with any vegetables you like, i.e potatoes, zucchini, christophinia, carrots, squash etc...seafoods, fish or meat can be added too!
To make cheezy pumpkin gratin you will need :
- Pumpkin and zucchini cut in small dices.
- Chopped onion.
- Finely chopped garlic
- Fresh thyme
- Cooking cream / Mozarella cheese / Butter
- Salt / Pepper / Oregano
Let the cooking start!
- Heat butter in the cooking pot.
- Add onion, garlic and thyme.
- Sweat for 2 minutes.
- Add the zucchini.
- Mix everything well together and let cook for 5 minutes.
Put the pumpkin in!
- Now that the zucchini is soft, add the diced pumpkin.
- Mix all together!
- Season with salt, pepper and oregano.
- Cook until you reach this result.
Next...
- Sprinkle the cooked pumpkin/zucchini with white flour - to thicken the mix!
- Cook for 5 minutes until everything is thicken as below.
- Add the cooking cream. Cook for further 3 minutes.
- Et voilà...the big task is completed. Can be eaten like this if you don't like cheese.
Pour the mixture in any oven dish and top with grated mozarella cheese, you can add any cheese you like.
And put to cook in the oven at 175°C until the cheese is melted and have a nice golden brown coloration!
