What a cold Monday! Yes friends, it is so cold today...I even woke up being sick! I am still not so well, taking up some vitamins to boost up and fight this flu!
I stayed most of the day at bed and woke up only during meal periods...for breakfast it was a quick hot milk tea and some medicaments!
Then woke up again when lunch was ready...it was my wife who cooked today! We had beef liver, steamed rice, yellow peas, crispy potatoes and green salad! Below is my plate!
Off to be again...
I wanted to feel better before I start getting ready for work...that's why I went to bed again! Took some medicaments again...
I stayed far from the kids today and let them play while watching from far - Don't want them to get sick too because of me!
For tea time today, my wife made some 'bhajia' which is a fried batter made with chickpeas flour, spices and herbs! They are usually eaten hot with some spicy chutney!!!
Then I got ready for work - I was feeling little better at that time!
And when I reached my kitchen, I saw 2 nice looking pineapples sitting there...
We are not yet in the 'real' pineapple season, which is usually in the summer months where we get the best quality of Victoria Pineapple in Mauritius!
These 2 were quite sweet but only with some dark spots inside...but we can take them off easily!
So I decided to make a confit/pickling with them, this way they will stay longer!
After peeling and taking off the 'eyes' and the dark spots, I cut them as you can see in the below photo...
There were still some dark spots inside, but this was not a problem as they were going to be pickled and I will do some experiments once ready!
To make pineapple confit...you only need:
- Pineapple
- Vinegar
- Raw Sugar
- Red Chili
- Coriander Roots
And a sterilized jar to put them in!!!
Make like a brine by mixing the vinegar with raw sugar and heat to 60 Degrees Celcius! Don't let it boil!
While the vinegar is heating, put all the pineapple cuts, coriander roots and chili in the sterilized jar!
Pour in the warm vinegar and make sure to cover all the ingredients inside!
And this is it...
Now I will let it at room temperature for 1 full day and night. And then tomorrow, the jar will be kept in the fridge for at least 3 days...only then we can start eating them!
I will use these pickled pineapples in my sweet and sour fish dish that is so loved by all...and also try out some new ideas...
In the days to come, maybe tomorrow, I will make pickled carrots too...anyway, I will share it with you for sure!
Otherwise, the service was very calm tonight and now I am back home...still not so well! I just hope I wake up fit tomorrow morning!!!
