Hey there guys here i am again bringing another vegetarian recipe for you. This time i'm gonna tell you guys about a new soup i made one of these days using textured soy protein as the main source of protein plus a lot of different vegetables.
As a vegetarian and an active person i need to always focus on the protein intake on my meals, and the textured soy protein is a great source, the only problem is the strong taste and the gasses it gives you if not cooked properly, so i always try to let it submerged in water for as least 12 hours, preferably 24 hours, changing the water from time to time.
After letting it on the water i wash it for a long time, squeezing it under the faucet until it stops making little air bubbles when i squeeze. Then i drain it hard until there's little water left.
After letting the protein on the sieve, i started cutting 1 large onion and 3 garlic cloves in small squares and let it braise on the pan with 2 spoons of olive oil
I waited until the onions and garlic brown and added the soy protein, the ideia is to let the soy protein cook with something tasteful for a long time to lose the original taste and absorb the good taste of the other ingredients.
A little bit later i added 3 chopped tomatoes and 1 spoon of sweet smoked paprika to reinforce the flavor, added a little bit of water too and left it cooking with the lid on low heat meanwhile i started washing, preparing and chopping the other ingredients.
I used 1 large carrot chopped in little squares, i like to put carrots in the recipes because it has vitamins, carotenoids, potassium, fiber, antioxidants and tastes really good, it gives a sweetened taste to the mix.
I also used one zucchini chopped into little squares too. I lived in a lot of places in Brazil and in some of them it was impossible for me to buy zucchinis, they were realy expensive. In this region i live now it's a lot cheaper so i buy them everytime i go to the market, we make a lot of recipes with it. (it tastes really good on the barbecue grill, someday i will show you guys my recipe)
For the carbs i used 2 large potatoes, i washed them well and peeled them before chopping. I absolutely love potatoes, for me it's the best carb ever, i make them a lot of times every weak in a lot of different ways like mashed potatoes, boiled potatoes, fried without oil on the airfryer, baked on the microwave, i'm kinda a potato freak haha

Now i add both the carrot and potatoes do the pan, and add a little bit more of water so it covers the ingredients to boil them. Another ingredient i used is pumpkin, i have a little trick to help the peeling of it, i let it in the preheated oven for about 5 to 10 minutes, then it cooks a little and make the shell softer, so it's easier to peel it off, then i cut it medium squares and throw it on the pan with the rest os the ingredients.
Another source of fibers i used is the cauliflower, i like it because it gives you satiety and has a lot of vitamins too, it's also something that is always on my diet. So in this recipe i washed it really well, cut every flower in the middle and added it a little bit after the other ignredients started boiling, because i want those cauliflowers crunchy, so the cooking time is lower than the other ingredients.
Here is the pan with all the ingredients in it, in this moment i check out on the salt, and put some more spices, in this recipe i used i little bit of curry and reinforced with more sweet smoked paprika.
And here is the result after cooking for 1 minutes, how does it looks like? I guarantee you guys it tasted really well, we ate that whole pan that night, haha.
