The sandwich will always be the best option for those moments when we want to prepare something quick and at the same time delicious. And we can easily adapt it to breakfast, dinner and even lunch just by changing its ingredients!
Happy day friends of Foodies Bee Hive! It's almost the weekend again, so I decided to bring you an ideal recipe for those days when we are looking for something practical and without much work.
This is a sandwich with chorizo and vegetables that we prepared for lunch a few weeks ago on an impromptu camping day in the backyard of our house with my husband and kids.
I don't know if it happens to them like it does to us at home, we get to the weekend absolutely exhausted and what we want is to spend less time cooking, so we try to prepare simple recipes that don't take us too much time. Not only to rest, but because the weekend is also loaded with tasks, so optimizing time is super important!
And what could be easier than a sandwich! In fact our weekends are almost exclusive of sandwiches and tortillas because besides being easy and quick to prepare we all like them at home, so when we organized our picnic at home that was our first choice.
Since it would be for lunch we needed protein in a good quantity and we decided on chorizo plus vegetables and we would have protein, vegetables and carbohydrates.
The idea was to buy the chorizo and prepare what we know here as "choripanes" but unfortunately we only found chorizo paste. Luckily that didn't stop us, because with the help of some wheat flour we managed to mold the meat and shape it into sausages, we grilled them and that was it. We had the perfect stuffing to accompany a delicious country bread to which we decided to add a garlic and cilantro sauce made by our children.
And now let's get to the recipe (it serves 4 people).
4 peasant bread loaves
500grs of chorizo paste
2 large tomatoes
Lettuce
1 Onion
4 cloves of garlic
A sprig of cilantro
3 large spoonfuls of mayonnaise
Wheat flour (amount needed)
With the help of the wheat flour I shaped the chorizo dough and proceeded to cook them.
In my case I used the electric frying pan with a little oil and cooked until golden brown.
While our chorizo was cooking I took care of cutting and disinfecting the vegetables.
The children took the mayonnaise, garlic and cilantro to the food processor to prepare the sauce to accompany our sandwich.
Once the chorizo was ready, we cut the bread diagonally and then in half to fill them, starting with a little sauce, then the vegetables, the chorizo and a little more sauce.
This way we had a very complete lunch ready, super delicious and perfect for a weekend.
The sauce was delicious and ended up being the perfect complement to our picnic sandwich.

El sándwich siempre será la mejor opción para esos momentos en los que queremos preparar algo rápido y a la vez delicioso. Y es que fácilmente podemos adaptarlo a un desayuno, cena e incluso almuerzo con sólo cambiar sus ingredientes!
Feliz día amigos de Foodies Bee Hive! Ya casi es fin de semana otra vez, por eso he decido traerles una receta ideal para esos días en los que buscamos algo práctico y sin mucho trabajo.
Se trata de un sándwich con chorizo y vegetales que preparamos para almorzar unas semanas atrás en un día de camping improvisado en el patio de nuestra casa con mi esposo e hijos.
Y es que no se si les pasa como a nosotros en casa que llegamos al fin de semana absolutamente agotados y lo que menos queremos es pasarla cocinando, por lo que tratamos de preparar recetas sencillas que no nos tomen mucho tiempo. No sólo para descansar, sino porque el fin de semana viene también cargado de tareas, por lo que optimizar el tiempo es súper importante!
Y qué más sencillo que un sándwich! De hecho nuestros fines de semana son casi exclusivos de sándwich y tortillas porque además de ser fáciles y rápidos de preparar a todos en casa nos gustan, así que cuando de manera improvisada organizamos nuestro picnic en casa esa fue nuestra primera opción.
Como sería para almorzar necesitábamos proteína en una buena cantidad y nos decidimos por chorizo además de vegetales y ya tendríamos proteína, vegetales y carbohidratos.
La idea era comprar los chorizos y preparar lo que aquí conocemos como choripanes pero lamentablemente sólo encontramos pasta de chorizo. Por suerte eso no nos detuvo, ya que con ayuda de un poco de harina de trigo logramos moldear la carne y darle forma de salchichas, las asamos y listo. Tuvimos el relleno perfecto para acompañar un delicioso pan campesino al cual decidimos agregar una salsa de ajo y cilantro hecha por nuestros niños.
Y ahora sí vamos con la receta (rinde para 4 personas).
4 panes campesino
500grs de pasta de chorizo
2 tomates grandes
Lechuga
Cebolla
4 dientes de ajo
Una ramita de cilantro
3 cucharadas grandes de mayonesa
Harina de trigo (cantidad necesaria)
Con ayuda de la harina de trigo dí forma a la pasta de chorizo y procedí a cocinarlas.
En mi caso utilicé el sarten eléctrico con un poco de aceite y cociné hasta dorar.
Mientras se cocinaba nuestro chorizo me encargué de cortar y desinfectar los vegetales.
Por su parte los niños llevaron al procesador la mayonesa, el ajo y el cilantro para preparar la salsa con la que acompañaríamos nuestro sándwich.
Comdimentaron con sal y pimienta y estábamos listos para continuar.
Una vez listo el chorizo cortamos los panes en forma diagonal y luego a la mitad para rellenarlos, comenzando untando un poco de salsa, seguidamente los vegetales, el chorizo y un poco más de salsa.
De esa manera tuvimos listo un almuerzo bastante completo, súper delicioso y perfecto para un fin de semana.
La salsa quedó riquísima y terminó siendo el complemento ideal para nuestro sándwich de picnic.
