Back to the weird stuff. Last time I cooked giblets the result was pretty good (Turnips with chicken giblets), so I tried it again. I believe this is a more typical recipe and way easier.
De volta às coisas estranhas. A última vez que cozinhei miúdos de frango o resultado foi bastante bom (Nabo com miúdos de frango), portanto decidi tentar novamente. Acho que esta receita é mais típica e muito mais fácil.
Ingredients / Ingredientes:
| 800g of chicken giblets | 800g de miúdos de frango |
| 1 bay leaf | 1 folha de louro |
| 4 garlic cloves | 4 dentes de alho |
| 3dl of white wine | 3dl de vinho branco |
| 1 onion | 1 cebola |
| 1dl of tomato sauce | 1dl de calda de tomate |
| 2 soup spoons of olive oil | 2 colheres de sopa de azeite |
| 1 soup spoon of butter | 1 colher de sopa de manteiga |
| 1 bunch of parsley | 1 ramo de salsa |
| 1 bunch of coriander | 1 ramo de coentros |
| cumin | cominhos |
| salt | sal |
I used 1Kg of giblets (livers, hearts and gizzards. No necks.) and needed a bit more wine than expected.
Usei 1Kg de miúdos (fígados, corações e moelas. Pescoços não.) e precisei um de um pouco mais de vinho do que o esperado.
1 - Wash the giblets carefully and cut them in smaller parts if needed.
1 - Lavar os miúdos cuidadosamente e cortar em bocados mais pequenos, se necessário.
2 - Make a marinade with the giblets, wine, garlic, parsley, bay leaf and salt. Wait at least for a few hours. If possible... cook it the next day, as I did.
2 - Fazer uma marinada com os miúdos, vinho, alhos, salsa, louro e sal. Esperar pelo menos umas horas ou preferencialmente deixar de um dia para o outro, como eu fiz.
3 - Now the cooking starts. Onion, butter and olive oil. Fire for 2 minutes 🔥
3 - Agora começamos a cozinhar. Cebola, manteiga e azeite. Lume durante 2 minutos 🔥
4 - Add the giblets (not the marinade) and stir for 5 minutes. Then, add the tomato sauce, the cumin and the marinade.
4 - Juntar os miúdos (sem a marinada) e mexer durante 5 minutos. Depois juntar a calda de tomate, os cominhos e a marinada.
5 - Cook slowly until the giblets are properly boiled..
5 - Deixar cozinhar lentamente até os miúdos estarem cozidos.
6 - The most obvious to serve it is with rice and that's exactly what I did. And don't forget to chop fresh coriander and parsley for a perfect finish. It's time to... Shut up and eat! 😋
6 - A forma mais óbvia de servir é com arroz e foi exactamente o que fiz. Não esquecer de picar coentros e salsa frescos para um final perfeito. É tempo de me calar e comer! 😋
