When you can't think of any dish to cook for the day, then why not just make something simple, something that is not complicated, and something that doesn't require hard labor? Like, go on with just frying? Or maybe boiling? Lol. We tend to think of pleasing more of our palate, and we sometimes forget that even the simplest things can make us full and happy. Go on and try, and let's take it easy for now, shall we?

It's just Me and Mom today at home. Mommy D is living with her sister right now after she underwent a lens implant on November 27. Mommy is kind of picky about her food, even before, so it's kind of hard to think of foods that will satisfy her. But it's not like she has a choice not to be picky because, to be honest, there's a lot of food that's not allowed for her. Anyhow, it's just me and mommy F right now, and when it comes to food, we can eat everything except foods that can cause a high blood pressure, of course.
We've been eating meat and fish these past few days, and I feel sick from it already, so I want something different again today. Something without any meat or fish, but just vegetables. I thought of something first but had a hard time thinking, so I looked for something on the internet. Then I stumble upon a short clip about vegetable pancakes. I also see the process, and the veggies used were just carrots, broccoli, and cabbage.
And because it's a pancake, they use fresh milk in it. But I don't like that, so I removed milk from my recipe. I think I shouldn't call mine Vegetable Pancake because it's really far from Pancake. It's just like an Omelette with mixed vegetables in it, so it should be a vegetable Omelette? Hmmmmmmm ತ_ತ, that sounds okay.
Anyhow, I will share with you all the process of making it, starting with the ingredients.

So down with the usual way of cleaning our vegetables. Soak it in clean water with a pinch of salt. But before I soak it, I wash it first just to be sure. And by the way, I actually bought these veggies already like this, cut in a small size. They usually mix them in cooking pancit or noodles, and this is much cheaper than buying them separately.


And here's our three eggs with the mixed veggies. I'm putting it here because I planned to cut these veggies into much smaller sizes. I thought it was still a bit bigger for me, so I'll just cut them.


Here's our onion and garlic, I just chopped them like this. At first, the plan was to cut them like a stick, but then it would be too big, so I just chopped them like that. I didn't put a lot because I don't want the smell to be overpowering, it might smell too strong, and I don't like that.


And here's my final cut of the veggies. It's not that good, but I find them pretty like that. I just basically chopped the cabbage in there while I cut the others like a stick. This is the shape I saw on that pancake recipe I watched, so I just copied it. And I feel like if I chopped them into smaller pieces, the result might not be to my liking.


We'll proceed now with the mixed veggie batter. Yes, I prepared it separately like this, just like what I saw in that video clip. I cracked open the eggs, then added salt, a good amount of pepper, and the chicken cubes. I kind of regret putting a cube here, I should've used other seasoning, but then again, I already put it there and can't do anything about it anymore. As for you, it's either powder or liquid seasoning, but never this cube.


The moment of truth, I finally mixed the seasoned egg with the mixed veggies. I also prepared the flour and mixed one tablespoon after mixing it. I didn't put the flour in one go, yes. I didn't strain the flour either, but you can do that to yours if you ever decide to try this.


Cooking time! I heat the pan on low heat, and I also prepare the vegetable oil. I just scooped a half tablespoon of oil and put it on the pan. And moving on to the mixture, depending on the size of the Omelette that you want, use a spoon or just whatever to scoop it.


Put it in the pan and spread it like this, mine is a little thinner, still on low heat. I cook each side for about 4 minutes, it's really on low heat because I want to cook even the inside of it. I don't want it crispy, which is why I didn't put more flour in it, as I said. And flour is just like a binder here so that it won't break—the whole thing, I mean.


And it's done! Tadaaaa! Tadaaa (人 •͈ᴗ•͈) I was able to make 5 vegetable omelettes here. It's a healthy version of the dish, it's not too oily. I feel like it's been forever since I last ate vegetables. But, to be honest, we eat it every day, but if it's just on repeat, we can't help but get tired of it. Good thing there's more recipes out there for a good dish like this. It's simple and healthy.






Mom immediately gets one of these and eats it with ketchup, it's like she ate it as a snack. As for me, I get three tablespoons of rice and eat it with this. Be it a snack or dish for rice or a patty for your buns, this is good, and you'll surely love it too. Mom loves it so much, I tell you. She likes how I seasoned it, and it is just what she wants.
