I found this great chicken recipe the other day. I'm always looking for new, interesting recipes and a few days ago I found this Balsamic Chicken Breasts recipe.
I work from home, but I work pretty long hours so I like to use my slow cooker a couple of times a week. Not only does this simplify meal preparation but it fills the house with
wonderful aromas while a tasty meal is simmering away all day.
Anyway, I was looking over this chicken recipe and I was thinking of a couple of great additions I could make that would make this recipe even more perfect for my family and our particular tastes. The original recipe was 4 boneless, skinless chicken breasts,
1 can of tomatoes, 3 cloves of garlic, 1 small onion, 1/4 cup balsamic vinegar, 1 Tablespoon brown sugar, 2 teaspoons extra virgin olive oil and 3/4 cup shredded mozzarella cheese.
I like to spray my slow cooker with non stick spray to help with cleanup. Then I poured my can chopped tomatoes in, put salt and pepper on the chicken and added it to the pot. I sprinkled a spoon of Italian seasoning on the chicken. I decided to also add a cup of chopped mushrooms and a small can of chopped black olives. I chopped 2 cloves of the garlic and the onion and threw that in.
Next, I took the balsamic vinegar and finely minced the last clove of garlic and whisked that together then poured it over the chicken. Cook 4-5 hours on high or 7-8 hours on low. Just before serving, top chicken with the grated mozzarella and cook until the cheese is melted. I served this over some angel hair pasta with a green salad, YUM!
