Hoy les traigo una receta que es tan grandiosa, que quisiera compartirla con todos ustedes para que cada vez más personas prueben la magia de los alimentos “plant based”.
Hace poco más de un año, tomé la decisión de modificar mi rutina alimentaria eliminando las carnes definitivamente de mi dieta, lo que comúnmente se llama vegetarianismo🌱. Nunca fui muy amante de la carne a lo largo de mi vida, por lo que no me resultó tan compleja esta transición, sin embargo, algunas recetas cárnicas me resultan sumamente tentadoras, y un poco las extraño, no voy a mentirles 🤭
Una de esas recetas recordadas y anheladas por mi paladar son las famosísimas Empanadas Argentinas, con su receta tradicional a base de carne picada. Por fortuna una gran amiga, Rocha, me convidó una vez una de sus empanadas de carne veganas (es decir, elaboradas a base de plantas), ya que ella sigue este régimen alimentario, y realmente mi boca se lleno de sabor y alegría porque estas empanadas imitaban a la perfección la receta original, aportándole incluso más sabor. Con un poco de desesperación, le pedí su receta, y comencé a prepararlas en mi casa.
En un primer momento, las empandas salían insulsas, con poca gracia, no resultaban para nada tentadoras, sin embargo con el correr de los intentos y manteniendo el optimismo, logré combinar los ingredientes a la perfección✔️ de manera que hoy mis empanadas veganas son un éxito entre mis amigos y familiares, todos quieren que lleve algunas docenas a cada reunión, incluso me han ofrecido venderlas! 🥟🥟
Así que a continuación les contaré sobre este descubrimiento tan maravilloso que hace feliz a mucha gente (y también a muchos animales) ❤️

Today I bring you a recipe that is so great that I would like to share it with all of you so that more and more people can try the magic of “plant based” foods.
A little over a year ago, I made the decision to modify my eating routine by permanently eliminating meat from my diet, which is commonly called vegetarianism🌱. I was never a big meat lover throughout my life, so this transition was not so complex for me, however, some meat recipes are extremely tempting to me, and I miss them a little, I'm not going to lie to you 🤭
One of those recipes remembered and longed for by my palate are the famous Argentine Empanadas, with their traditional recipe based on minced meat. Fortunately, a great friend, Rocha, once treated me to one of her vegan meat empanadas (that is, made from plants), since she follows this diet, and my mouth really filled with flavor and joy because these empanadas perfectly imitated the original recipe, giving it even more flavor. With a little desperation, I asked him for his recipe, and I started preparing them at home.
At first, the empanadas came out bland, with little grace, they were not tempting at all, however with the passing of the attempts and maintaining optimism, I managed to combine the ingredients to perfection✔️ so that today my vegan empanadas are a A hit with my friends and family, they all want me to bring a few dozen to every meeting, they've even offered to sell them! 🥟🥟
So below I will tell you about this wonderful discovery that makes many people (and also many animals) happy ❤️
Ingredientes para preparar 3 docenas de Empanadas Veganas:
- 250 gs de Soja Texturizada
- 1 caja de puré de tomate (aprox 500ml)
- 120 gs de aceitunas verdes descarozadas (o un paquete grande)
- 3 o 4 zanahorias
- 3 o 4 cebollas
- 3 o 4 dientes de ajo
- 3 docenas de tapas para empanadas
- Especias: pimentón dulce, adobo para pizza, perejil deshidratado, sal.
Opcional:
- Huevo duro picado (la preparación pasaría a ser vegetariana en vez de vegana, atentos a esto a la hora de servir)
- papa en cubitos
- pasas de uvas
- cebolla de verdeo
- morrón, etc.
Yo consumo huevos pero en esta oportunidad decidí no agregarle a la receta ya que quería mantenerla vegana y con la menor cantidad de productos de origen animal posible, ustedes sin embargo pueden hacerlo sin problemas!
Consideraciones:
-Yo realizo esta receta siguiendo estos ingredientes, pero a veces los alterno con otros que tengo más disponibles en mi casa. Siéntanse libres de jugar y de aprovechar todo lo que tengan en su heladera, pueden dejarme en comentarios si utilizaron otros ingredientes y que tal les fue con ellos.
-Las cantidades no son sumamente exactas, es más bien lo que suele llamarse “a ojo”, pero con las imágenes podrán darse una idea de las proporciones.
-Si bien la mayoria de los ingredientes pueden adquirirse en supermercados, la soja texturizada suele encontrarse en las casas de dietéticas, a un precio muy económico.
-Pero Meli… ¿Qué es la Soja Texturizada?
La soja texturizada es un alimento que se elabora a partir de harina de soja desgrasada de alta calidad. Surge como una “alternativa al alimento vacuno” por su aspecto tan parecido. Se trata de un alimento muy completo y nutritivo, convirtiéndose en la legumbre seca de mayor valor energético. La soja fue denominada como una “legumbre sagrada” gracias a todos los beneficios saludables que aporta su ingesta. Dato: Su contenido de proteínas es superior al de la carne.
Sin más preámbulos, comencemos!
Ingredients to prepare 3 dozen Vegan Empanadas:
- 250 g of Textured Soy
- 1 box of tomato puree (approximately 500ml)
- 120 g pitted green olives (or a large package)
- 3 or 4 carrots
- 3 or 4 onions
- 3 or 4 cloves of garlic
- 3 dozen empanada tapas
- Spices: sweet paprika, pizza marinade, dehydrated parsley, salt.
Optional:
- Chopped hard-boiled egg (the preparation would become vegetarian instead of vegan, pay attention to this when serving)
- diced potato
- raisins
- green onion
- bell pepper, etc.
I consume eggs but on this occasion I decided not to add them to the recipe since I wanted to keep it vegan and with the least amount of animal products possible, however, you can do it without problems!
Considerations:
- I make this recipe following these ingredients, but sometimes I alternate them with others that I have more available in my house. Feel free to play and take advantage of everything you have in your refrigerator, you can leave me in comments if you used other ingredients and how it went with them.
- The quantities are not extremely exact, it is more what is usually called “by eye”, but with the images you will be able to get an idea of the proportions.
- Although most of the ingredients can be purchased in supermarkets, textured soy is usually found in health food stores, at a very affordable price.
- But Meli... What is Textured Soy?
Textured soy is a food that is made from high-quality defatted soy flour. It emerges as an “alternative to beef food” due to its very similar appearance. It is a very complete and nutritious food, becoming the dry legume with the highest energy value. Soy was called a “sacred legume” thanks to all the healthy benefits that its intake provides. Fact: Its protein content is higher than that of meat.
Without further ado, let's get started!
PASO 1: HIDRATAR LA SOJA
Colocaremos los 250 gs de soja dentro de un bowl o recipiente de plástico grande, debemos asegurarnos de que sobre espacio para agregar el resto de los ingredientes (tener en cuenta que la soja ocupa mucho volumen).
Luego, añadiremos el puré de tomate SIN COCCIÓN, directamente de su envase. Es muy importante que el puré de tomate esté a temperatura ambiente o frío y sin cocción, ya que si le añadimos el puré de tomate caliente o cocinado, el sabor de la soja se sentirá como si estuviera “quemado” y esto arruinará la receta (te lo digo por experiencia propia😅)
STEP 1: HYDRATE THE TEXTURED SOYBEANS
We will place the 250 g of soy inside a bowl or large plastic container, we must make sure that there is enough space to add the rest of the ingredients (keep in mind that soy takes up a lot of volume).
Then, we will add the UNCOOKED tomato puree, directly from its container. It is very important that the tomato puree is at room temperature or cold and not cooked, since if we add hot or cooked tomato puree, the soy flavor will feel as if it were “burnt” and this will ruin the recipe ( I'm telling you from my own experience😅)
Paso 2: Aceitunas y Ajo
Una vez mezclada la soja con el puré de tomate, incorporaremos las aceitunas, previamente picadas y descarozadas (pueden utilizar aceitunas negras o rellenas, en el caso de las empanadas yo elijo aceitunas verdes ya que le aportan color y un sabor característico, apegándose a la receta original) y los dientes de ajo, previamente pelados y picados.
Una vez realizado este paso, y luego de mezclar muy bien los ingredientes, recomiendo reservar en la heladera unas cuantas horas, yo suelo realizar este paso la noche anterior a preparar las empanadas, para que con el correr de las horas se impregnen muy bien todos los sabores, pero ustedes pueden dejarlo el tiempo que consideren (mínimo de 1hs y un máximo de 3 días, ya que luego de este tiempo no es seguro comer la preparación)
Step 2: Olives and Garlic
Once the soy is mixed with the tomato puree, we will add the olives, previously chopped and pitted (you can use black or stuffed olives, in the case of empanadas I choose green olives since they add color and a characteristic flavor, sticking to the original recipe) and the garlic cloves, previously peeled and chopped.
Once this step is done, and after mixing the ingredients very well, I recommend reserving it in the refrigerator for a few hours. I usually do this step the night before preparing the empanadas, so that as the hours go by, they all soak very well. the flavors, but you can leave it for as long as you consider (minimum of 1 hour and maximum of 3 days, since after this time it is not safe to eat the preparation)
Paso 3: Zanahorias
Lavar, pelar y cortar las zanahorias en cubos muy pequeños y hervir a fuego máximo durante el tiempo necesario (según dispositivos de cocción), hasta que los cubos estén blandos y puedan cortarse fácilmente.
Retirar del fuego, escurrir y pisar con un pisapapa o un tenedor, hasta que quede un puré rústico de zanahoria. Una vez realizado el puré, incorporar al recipiente con la soja.
Step 3: Carrots
Wash, peel and cut the carrots into very small cubes and boil over high heat for the necessary time (depending on cooking devices), until the cubes are soft and can be easily cut.
Remove from the heat, drain and mash with a potato masher or a fork, until you have a rustic carrot puree. Once the puree is made, add to the container with the soy.
Paso 4: Cebollas
Lavar, pelar y cortar las cebollas en juliana. Mientras tanto, colocar en una sartén manteca, margarina o aceite, según tus preferencias (yo suelo usar margarina) y una vez caliente la sartén con la margarina, incorporar las cebollas.
Cocinar las mismas (sin agregar sal) hasta que vayan ablandándose y poniéndose cada vez más transparentes.
TRUCO OPCIONAL: Cuando las cebollas comiencen a dorarse y a pegarse a la sartén, colocar un chorrito de vino tinto, vino blanco o cerveza, para levantar el fondo de cocción y asi rehidratar las cebollas incorporándole todo el sabor del vino y de la “costrita quemadita” que se forma en la sartén. Este proceso se conoce como caramelización. Continuar cocinando hasta que el alcohol se haya evaporado completamente (podemos darnos cuenta acercando nuestra nariz a la preparación, si no sentimos olor a alcohol quiere decir que ya se evaporó).
Una vez finalizado este paso, retirar del fuego las cebollas, e incorporar a la preparación integrándolas y mezclando muy bien.
Step 4: Onions
Wash, peel and cut the onions into julienne strips. Meanwhile, place butter, margarine or oil in a frying pan, depending on your preferences (I usually use margarine) and once the pan with the margarine is hot, add the onions.
Cook them (without adding salt) until they soften and become increasingly transparent.
OPTIONAL TRICK: When the onions begin to brown and stick to the pan, add a splash of red wine, white wine or beer to raise the cooking bottom and thus rehydrate the onions, incorporating all the flavor of the wine and the “burnt crust.” ” that is formed in the pan. This process is known as caramelization. Continue cooking until the alcohol has completely evaporated (we can tell by putting our nose close to the preparation, if we don't smell the alcohol it means it has already evaporated).
Once this step is finished, remove the onions from the heat and add them to the preparation, integrating them and mixing very well.
Paso 5: Especias
A esta altura, supongo que ya habrán probado este relleno de empanadas para ver a qué les sabe, pero si aun no lo hicieron, en este paso es el momento indicado.
Colocar pimentón dulce, adobo para pizza o mezcla para chimichurri, perejil picado, y sal a gusto. Pueden incorporarle las especias que más prefieran, pero les sugiero arrancar con esta combinación y luego ustedes podrán ir variándola según sus gustos.
Mezclar bien, y probar… Qué le falta? Más sal? Más perejil? Vamos corrigiendo el sabor a medida que vamos probando y revolvemos muy bien. Si notamos que la preparación esta muy seca, podemos incorporar aceite de girasol para humedecerla y darle una textura más suave. Por el contrario, si notamos que la preparación está muy líquida, incorporar más soja. Esta mezcla debe asemejarse a la carne picada o molida en cuanto a su textura y humedad.
Step 5: Spices
By now, I assume you have already tried this empanada filling to see what it tastes like, but if you haven't yet, this step is the right time.
Add sweet paprika, pizza marinade or chimichurri mix, chopped parsley, and salt to taste. You can add the spices you prefer the most, but I suggest starting with this combination and then you can vary it according to your tastes.
Mix well, and taste... What is missing? More salt? More parsley? We correct the flavor as we taste and stir very well. If we notice that the preparation is very dry, we can add sunflower oil to moisten it and give it a softer texture. On the contrary, if we notice that the preparation is very liquid, add more soy. This mixture should resemble minced or ground meat in texture and moisture.
Paso 6: Armado
Bueno amigos, llegamos casi casi al final.
Ahora tomaremos el relleno de nuestras empanadas, que ya esta muy sabroso y a temperatura ambiente/frío, y realizaremos las empanadas.
Recomiendo dejar las tapas fuera de la heladera unos minutos previos a comenzar el armado, para que con la temperatura ambiente puedan ser más fáciles de manipular. Colocamos una o dos cucharadas de relleno en cada tapa, según el tamaño de la misma, y cerraremos muy bien sus bordes. Podemos cerrar cada empanada con repulgue tradicional, o bien ayudándonos con un tenedor.
Step 6: Assembled
Well friends, we are almost almost at the end.
Now we will take the filling of our empanadas, which is already very tasty and at room temperature/cold, and we will make the empanadas.
I recommend leaving the lids out of the refrigerator for a few minutes before beginning assembly, so that at room temperature they can be easier to handle. We place one or two tablespoons of filling in each lid, depending on its size, and we will close its edges very well. We can close each empanada with traditional repulgue, or with the help of a fork.
Paso 7: Horneado
Mientras realizamos el armado de nuestras empanadas, precalentaremos el horno a una temperatura de 220° C (igualmente esto depende de cada horno, pero sería una temperatura más bien media/fuerte).
Una vez armadas las empanadas, aceitamos una fuente y colocaremos las mismas cuidadosamente, y luego… Al horno!
Hornear hasta que la masa este dorada, recordemos que el relleno no necesita más cocción!
Una vez listas, dejar enfriar
Y a disfrutarlas!
Step 7: Baking
While we are assembling our empanadas, we will preheat the oven to a temperature of 220° C (this also depends on each oven, but it would be a rather medium/strong temperature).
Once the empanadas are assembled, we oil a dish and place them carefully, and then... In the oven!
Bake until the dough is golden, remember that the filling does not need more cooking!
Once ready, let cool
And enjoy them!
