Hello lovelies, today I've brought you something special because I've made mirabelle plums for the first time. I usually eat them fresh and have never taken the time to make them into jam.
Many people told me this year that the fruit was too sour and their jam didn't turn out well. I found this a challenge - so I wanted to see what I could do about it. So I made my way to my bulging mirabelle plum tree. 🌳
They say you should pick fruit when the sun is shining and you're in a good mood. But this summer? A farce! Germany is bathed in tropical sultriness, interrupted by torrential downpours in which you sweat and freeze at the same time - as if two weather manipulators simply cannot agree.
And yet: I set off. With wellies, a rain jacket and the determination not to leave my Mirabelle plum tree to the bad weather without a fight. I got soaking wet twice - and not while bathing, but while picking. But what wouldn't you do for golden-yellow fruit that blinks so promisingly from the branch?
The harvest? Very promising! I left the mirabelles to ripen for another four days so that they would lose some of their acidity. I had to sort out a few overripe specimens, but the majority were flawless - a real reward for my weather-related sacrifices.
I came across a phrase that read: ‘Some feel the rain, others just get wet.’ I thought that was beautiful - and I decided to feel the rain.
There was a little secret when boiling it down: a pinch of baking soda in the cooking water to tame the acidity. Then only brown cane sugar - no white crystal stuff - and a gentle hint of vanilla for the soul. After cooking, it was sieved thoroughly and the velvety pulp was lovingly squeezed out. I used a total of 2kg of fruit and the amount of sugar and binding agent depends on your yield. 😊
And because I'm not only defying the weather, but also boredom: I ended up with two versions. A vegan version with agar-agar and a classic version with gelling sugar. Both are spreadable, aromatic and a real tribute to summer courage under grey skies.
I'm absolutely delighted with the result - a slight tartness, lovely details in the processing and, above all, there's really nothing that's off-putting here! 😄 🤣

Hallo ihr Lieben, heute habe ich etwas Besonderes mitgebracht, denn ich habe zum ersten Mal Mirabellen verarbeitet. Sonst esse ich sie immer frisch und habe mir nie die Zeit genommen, sie zu Konfitüre zu verarbeiten.
Viele erzählen mir dieses Jahr, dass die Früchte zu sauer seien und ihre Konfitüre nicht gelungen ist. Das empfand ich als Herausforderung – da wollte ich doch mal schauen, was man dagegen tun kann. Also machte ich mich auf den Weg zu meinem prall gefüllten Mirabellenbaum.
Man sagt ja: Obst soll man bei Sonne und guter Laune ernten. Aber dieser Sommer? Eine Farce! Deutschland badet in tropischer Schwüle, unterbrochen von sintflutartigen Regengüssen, in denen man gleichzeitig schwitzt und friert – als würden zwei Wettermanipulatoren sich einfach nicht einigen können.
Und doch: Ich zog los. Mit Gummistiefeln, Regenjacke und dem festen Willen, meinen Mirabellenbaum nicht kampflos dem miesen Wetter zu überlassen. Zwei Mal wurde ich klatschnass – und das nicht etwa beim Baden, sondern beim Pflücken. Aber was tut man nicht alles für goldgelbe Früchte, die so verheißungsvoll vom Ast blinzeln.
Die Ernte? Vielversprechend! Ich ließ die Mirabellen noch vier Tage nachreifen, damit sie etwas von ihrer Säure verlieren. Ein paar überreife Exemplare musste ich aussortieren, aber der Großteil war makellos – eine echte Belohnung für meine wetterbedingten Opfer.
Ich stieß auf einen Satz, der lautete: „Manche fühlen den Regen, andere werden einfach nur nass.“ Den fand ich wunderschön – und ich entschied mich, den Regen zu fühlen.
Beim Einkochen gab’s ein kleines Geheimnis: eine Messerspitze Natron ins Kochwasser, um die Säure zu zähmen. Dann ausschließlich brauner Rohrzucker – kein weißer Kristallkram – und ein sanfter Hauch Vanille für die Seele. Nach dem Kochen wurde kräftig durchgesiebt und das samtige Fruchtfleisch liebevoll ausgepresst. Ich habe insgesamt 2 kg Früchte verwendet, und die Menge an Zucker und Bindemittel hängt von eurer Ausbeute ab.
Und weil ich nicht nur dem Wetter trotze, sondern auch der Langeweile: Am Ende entstanden zwei Varianten. Eine vegane Version mit Agar-Agar und eine klassische mit Gelierzucker. Beide sind streichzart, aromatisch und ein echtes Tribut an den Sommermut unter grauem Himmel.
Ich bin absolut zufrieden mit dem Ergebnis – eine leichte Säure, liebevolle Details in der Verarbeitung, und vor allem: Hier stößt wirklich nichts sauer auf! 😄 🤣
