Leftover food
I hate wasting food, and I really try to avoid that as much as I can. Sometimes I accidentally prepare a bit too much of an ingredient and I can't avoid wasting a little, but when I can, I will always try to use it the next day or two days tops. Although I actually had some fresh vegetables ready for a nice healthy wrap yesterday, we decided to have an afternoon out together as a family and therefore we ate outside. My plan of eating the wraps yesterday and using the remaining beef stew from the day before didn't work out this time.
Prepared food vs unprepared food
Normally, I'd just move the remaining stew into the freezer, but there's no room there currently. In that case, I prefer to consume the prepped food before prepping another dish where we also usually end up with leftovers for the next day. Too bad that I didn't have enough potatoes for the stew and we're avoiding eating it with French fries (as the Dutch know it very well). I was hoping to solve that quickly when ordering groceries earlier today but I forgot to order the potatoes and of course, I discovered this just 15 minutes before I was going to prepare our dinner.
Time to get a little creative
We had half a pot of red cabbage leftover in the fridge from two days ago when we ate the beef stew, so at least this was not a problem. I already knew our daughter would be horrified by seeing the cabbage and she does accept potatoes without too much struggle, especially when it's served with beef stew. Too bad I didn't have enough. Then it hit me, I had 2 sweet potatoes waiting for me to prep them and decided to all put them in the pressure cooker at once and mash them up. My boyfriend prefers regular potatoes over the sweet ones as well, but I had the feeling he would like this combination of leftovers and decided to go for it.
Guess what? It was so good!
I honestly never get excited seeing pictures of any stew, it looks horrible usually, haha. This one is no exception! But it tasted so good, and I really think the sweet potatoes were very commentary compared to the regular potatoes. In fact, I will probably never use regulars again after this time.
I know it doesn't look like a special dish, but let me tell you it was so good! I love how some simple leftover day can turn out into a great meal.
