I promised that my next post after my introductory post was going to be food related. And I kept it.
Walk with me as I show you how to prepare Naija Jellof in Udemeabasi's style.
Actually, how momma taught me.
Every Sunday, we don't usually eat before going to church, it's always after church service that we'll return home to eat.
And this particular Sunday, there was nothing at home to go back and eat.
While still in church, the thought of what I'll eat when I get back home didn't even allow me to listen to the sermon. I was already hungry.
I was thinking of something quick to prepare when I get back home, but not noodles. I don tier for noodles 😂
Rice–it won't take time, but what type?
Normal "MTN Rice" as we commonly call it. Or Naija Jellof, a more formal way.
So, after church service , we headed back home, and immediately I opened the door, I went straight to the bag of rice, didn't even change my clothes. I needed to make sure that the rice was on fire while changing.

Salt | A teaspoon full |
Seasoning cubes | 4 |
Dry Fish | 5 pieces |
Oil | 20 ml |
Saint leafs | 20 leafs |
Curry leafs | 20 leafs |
I measured two cups and a half. We're five, and that's enough because we don't eat much like @imohmitchel😂
I washed it and put it on fire to parboil.
For quick boiling, I used the pressure pot. See me trying to cook rice under 40 minutes . Science will not allow .
After putting the rice on fire, I finally went to take off my clothes and air-dry them, then put on house clothes.
10 minutes and that's how long I can allow my rice to parboil, I went to check it. Yes, it was already boiling vigorously, so I brought it down, sieved it , pour in another clean water and washed it well before putting it back into the pressure pot to cook for some time.
After boiling for about 20 minutes, I poured it into another pot. The main pot, where I'll be adding the ingredients.
I had my ingredients prepared and ready while waiting for the rice to boil properly in the pressure pot.
So when I poured the rice into another pot, I added my grinded pepper with crayfish, salt and seasoning cubes.I poured in some of my onion, then left some for garnishment.

I allowed it to boil for about ten minutes.
When the ingredients were properly mixed, I threw in my dry fishes, pushed them into the rice to cook well.
When I wanted to add my Palm Oil , I added a glass of water , so it will help the oil to circulate well in the pot.
After adding the oil, I covered the pot and allowed it to boil , mix and also for the water to dry up.
Then I went outside to cut saint leafs and curry leafs
We have both plants at home, in our little garden. So, I just went outside to cut them...
I came back , checked my rice on fire first, the water wasn't totally dried up .
I didn't want my leafs to be completely cooked when I pour them in, so I waited for the water to dry up completely before washing, and slicing the leafs. When the water was dried up completely, I poured in the onions I left for garnishment and the leafs.
Immediately, I put of the fire, brought down my pot.
Because my Naija Jellof was finally ready.
I wish you could have a spoon. But go and cook yours 😂
It actually taste very nice.
