1 kg chicken, cut into pieces
3 cups basmati rice
2 onions, thinly sliced

Wash the rice thoroughly and soak in water for 30 minutes.
Heat oil in a large pan and add cumin seeds.
Once the cumin seeds start to splutter, add sliced onions and fry until golden brown.
Add ginger and garlic paste and fry for 2 minutes.
Add chopped tomatoes and cook until the tomatoes are soft.
Add coriander powder, garam masala powder, red chilli powder, turmeric powder and salt to taste. Mix well and fry for 2-3 minutes.
Add chicken pieces and yogurt. Mix well and cook until the chicken is half done.
Drain the soaked rice and add it to the chicken mixture. Mix well and fry for 5 minutes.
Add 4 cups of water and bring to a boil.
Add chopped coriander leaves, mint leaves and green chillies. Mix well.
Cover the pan with a lid and cook on low flame for 20 minutes or until the rice is fully cooked.
Once done, turn off the heat and let the biryani rest for 10 minutes.
Serve hot with raita and salad.
