Who doesn’t love empanadas? Not I! They’re labor intensive to prepare, but worth every drop of sweat and hour spent in the kitchen.
First step, assemble your ingredients. We’re 7 souks in the house, with out of town guests, so you can adjust ingredients to your needs.
I begin by boiling baking potatoes.
Meantime, I’m cleaning my meat of fat, cubing it and dicing green onions.
Your meat will take under an hour to boil and you can begin to shred it, once done.
Once the potatoes are boiled, around half an hour later, peel them, mash them and mix them with onions as well as the shredded meat.
At this time, you can begin to mix your wheat flour, with some water and roll it.
You will create little pockets, which you will stuff with the mix of mashed potatoes, diced onions & shredded meat.
Now, pop your meat pie pockets into the sizzling oil.
Once they are golden delicious, you can dip the empanadas into a tomato sauce or garlic paste as we did last night. Enjoy this tasty, hearty snack (which can double up as a meal) and congratulate yourself on the hard work that went into preparing it 👨🏻‍🍳
