When someone mentions Vietnamese cuisine, Hanoians are always proud of fish noodles combined with vegetables. That's also my entry today in @ecotrain's contest : "Cooking on A Budget Competition! Week 2: Noodles and Pasta! "

If you are tired of meat and want to eat light food, I recommend you to try this dish, its broth is a bit sweet and slightly sour that makes you want to eat it non-stop. We always eat raw vegetables with fried fish noodles so this dish is not only delicious but also good for health. The broth for fish noodle is made from simmering fish bones or fish heads. After the simmering stage, tomatoes are added to make color and sweetness to the dish. Fish noodles are sold everywhere in northern Vietnam, from luxury restaurants to small eateries or sidewalks. The type of fish often used to make this dish is tilapia because they are naturally sweet and have little bones, suitable for both children and the elderly. We usually eat fish rice noodles for breakfast or lunch, sometimes we also eat it for dinner. This dish is the perfect substitute for meat and rice. This dish has many different versions, some places use mackerel or snakehead fish, use vegetable water dropwort, banana flower or colocasia gigantea. This is my own recipe, you can cook it my way!! Just a tablespoon of fish noodles can warm our body in cold winter.

Wash the vegetables then chop the scallions, mustard greens and dill. Cut tofu into small squares, fry tofu until golden brown on both sides. Wash the fish then cut it into long thin pieces, fry the tilapia in a cooking oil pan over high heat until fish is crispy and brown on both sides. | Cắt đậu hũ thành những miếng vuông nhỏ, chiên đậu hũ cho đến khi chín vàng cả hai mặt. Rửa sạch cá sau đó cắt thành từng miếng mỏng dài, chiên cá rô phi trong chảo dầu ăn trên lửa lớn cho đến khi cá chín vàng đều hai mặt. |

Stir-fry chopped tomatoes with fish head, seasoning with salt (for a salty taste), seasoning, MSG (for a sweet taste), satay (for a spicy dish), cashew powder (gives this dish an attractive color). Add boiling water and then cook the fish head over low heat for about 1 hour so that the fish head exudes sweetness. Then add tofu and continue to cook for 5 minutes, blanch bean sprouts and rice noodles in fish water for about 1 minute, then remove and set aside. Add mustard greens to the pot and continue to cook for 2 minutes, then turn off the heat. | Cho cà chua đã thái nhỏ vào xào với đầu cá, nêm muối (để có vị mặn), hạt nêm, bột ngọt (để tạo vị ngọt), sa tế (cho món cay), bột điều (để món ăn có màu hấp dẫn). Thêm nước sôi vào rồi nấu đầu cá trên lửa nhỏ trong khoảng 1 giờ để đầu cá tiết ra vị ngọt. Sau đó cho đậu phụ vào tiếp tục nấu trong 5 phút, chần giá đỗ và bún gạo trong nước cá khoảng 1 phút rồi vớt ra để riêng. Cho cải xanh vào nồi tiếp tục đun khoảng 2 phút thì tắt bếp. |
