I do freeganism, like a lot. Last month I spent less than 10% of my average Polish salary on food. But there are some certain vegetables I just avoid. Reason? I have no idea where I could use these. One of them by now was an eggplant. I wasn't even sure if you can eat it raw (you cannot) or if you eat it peeled or not (not peeled, unless in this recipe). When I looked into one of the dumpsters, this was my view.
Eggplants everywhere! And one bra. I managed to pick the best ones and my quest to befriend those weird purple things begun. A friend of mine suggested vegan eggplant pate perfect to bread and snacks. Few minutes on the Internet and we had the recipe.
Ingredients:
1 eggplant
1 clove of garlic
2 tbsps of tahini
2-3 tbsps of lemon juice
pinch of a Roman cumin
1 tbsp of olive oil
pepper, salt
First of all, you need to wash your eggplants and pierce them with a fork, and then put them in the oven heated to the 180 C. If your eggplants are big you can cut them in half and wet them with a little bit of olive oil. Purple bastards should look like this.
Inside they are now brownish and should come away from the skin easily, it felt like I was dealing with some meat, also looks a little bit like chicken, doesn't it? For a vegetarian with a 6year experience, this was rather unpleasant thing to do.
Now it's time to cut or press your garlic and put all the other ingredients (including olive oil) together in a bowl. You can cut or press your garlic and add some other spices.
Until now it doesn't really look like the food I would enjoy. Slimy, brownish, and fibrous, yes, eggplant is a hell of a weird thing. A miracle happens when you turn your blender on.
Yeah, this starts to look a little bit like a humous, which is very food-like to me, in the end, I can have very fruitful relationship with eggplant! And here is some final look with a freegan bread. Enjoy!
