Fruits are important for healthy diet. They are high in vitamins and minerals. They are loaded with antioxidants which help protect cells in the body. Each fruit brings it's own unique nutrients and benefits to the table.
For this second week of the medicinal cooking competition in this community,I will be showing my recipe for fruit salad with carrot toppings. Amazing right? A fruit salad,with a vegetable finishing. Perfect!
The following are the fruits I used:
- 1 Cucumber (low in calories buy contain vitamin and mineral which helps in balanced hydration).
- 2 bananas (contains vitamin C,potassium and other vitamins which can boost digestion).
- 2 Oranges (known for high vitamin C,potassium, vitamin B1 necessary for boosting one's immune system).
I decided to do a little twist by adding a vegetable,that is :
- 4 small carrots (contains fiber good for blood sugar levels).
And a very little lemon juice
These fruits are quite affordable in Nigeria.
Ensure your fruits are properly rinsed,the carrot inclusive.
So let's begin :
Step 1- peel oranges to second layer,then separate and set them aside.
Step 2-grate carrot ( you can use any grate size and shape you would prefer).
Step 3- Slice cucumber into choice shape and size. I sliced mine into a round and triangle shape.
Step 4- Peel bananas and slice.
Step 5- In a plate,place fruit in preferred order. For me,it was the cucumber first,oranges followed,bananas and carrots last.
Step 6- pour round the lemon juice and your nutritious fruit salad with carrot toppings is ready.
You can never eat too much of fruits. They can serve as breakfast, lunch,dinner and even snack. Had mine for dinner. Fruits lower your risk of diseases. They are safe for diabetics and even people following a low - carb diet.
They can be consumed by all ages. Taking them on a daily basis helps as they are also high in water.
