Saturday started with a third round of melted plastic on the stove top in seemingly as many weeks. It's becoming a habit for Mr SW, so to escape the smell we headed to a newish bakery for breakfast. After pizzetta in the park we purchased our weekly vegetables from the local farmers' market.
For a healthier lunch we made Curried Sweet Potato Soup
Ingredients
- one onion
- four medium sweet potatoes
- a can of coconut cream
- curry powder to taste
- stock (or water) to achieve desired consistency
- seasoning
Fry chopped onion in curry powder, add a bit of stock/water, add chopped sweet potato and coat, add coconut cream, seasoning and remaining stock/water. Boil until potatoes are cooked. Blend (or not) and enjoy, we added cracker croutons.
This made three super thick and filling portions, could be four with some toast. And yes we are too lazy to peal the potatoes, I even make mashed potato with the skin on. Why create the waste.
Easy and tasty, I think the original recipe had some sort of legume in it, red lentils, yellow split peas and chickpeas would all work well. You could also easily swap to a heap of other vegetables, white potatoes, carrots, pumpkin or a mix.
I've been using the app BigOven to keep our meals ideas together, there is huge inbuilt recipe selection and an option to add your own recipes. So we're enjoying exploring new but easy dishes. I also added the recipes I've collected from the supermarket magazines. I like being able to search by ingredient, rather than a dish. This week I'll be looking for dishes with purple kale, cauliflower, softball sized beetroot and slim eggplant (aubergine).
