Today, I'd like to write about my new ideal mold I recently bought.
This morning, I baked with the new mold and, the banana bread shape turned out exactly as I'd dreamed it would for the past 10 years. I almost did a little jig in the kitchen!
Soon after moving to Germany ten years ago, I bought a pound cake mold made by a popular German manufacturer. It's been helping me to bake bread and cake. However, there were two particular things about it that nagged at me throughout these years.
The sides of the mold aren't straight up, and because of its large cross-sectional area, the result often looks like a homemade, "made with love, though it might look a bit quirky 😉" kind of bread or cake. Lining up the new and old molds side by side, you can easily see the difference.
I've created many delicious cakes and cherished memories with the old mold. But ... they tend to come out in away flat. It's not just the amount of the dough I baked in.
Breads seem a bit off too. The second photo shows a loaf I used my mother's tin which has straight sides.
It might be a tiny difference, but it's a big difference for me. When my cakes turn out flat, I feel down ... So, I looked for a slim mold and found that I could buy one from Kai Corporation, a Japanese brand, on Amazon.de. I splurged a whopping 30 Euros (in Japan, the manufacturer's page lists it for 1150 yen).
It was expensive but I must say it was one of the best purchase ever 😊 I should have bought this away away earlier.
My oven still behaves like it's hell-bent on baking everything at 240°C, leaving the top of the banana bread a tad burnt. Nonetheless, I'm utterly satisfied with its shape. I can't help but smile every time I see the banana bread in the kitchen.

買ってよかった 🥺 もうこんなことならなんで早く買うか、日本で買ってこなかったんだ、私！オーブンは相変わらずすべてを240度で焼き尽くすかのような壊れっぷりで、バナナケーキの上部は焦げ気味ですが、形には大満足です。台所で目につくたびにニヤニヤしています。
今日は、私が長らく愛用してきたドイツの一般的なパウンドケーキ型と、最近手に入れた新しい理想の型について書きたいと思います。
というのも、今朝新しい型で焼いたらもうこの10年間夢に見まくった理想の形にバナナブレッドが焼けて、早朝に台所で小躍りしそうになったからです。
ドイツに移住してすぐに購入したパウンドケーキ型は、ドイツのメーカーのもので、10年近くパン作りやケーキ作りを助けてくれました。ただ・・・二点ほど不満があって、この10年気になって気になって気になりまくっていました。
型のサイドが立っていなくて、断面積が大きいので、どうしても見た目が「家庭で作りました、見た目はちょっとアレだけど、愛情たっぷりです😉」といわんばかりのパンやケーキになるんですよね。型を並べてみると違いがよくわかります。
多くの思い出やおいしいケーキの数々をこの型と一緒に作り上げてきました。・・・が、のっぺりするんです。
食パンを焼いてもなんか間抜けです・・・。母の形見の富沢商店のサイドがバシッと立った直方体の型で焼くと大違いです。
ライ麦パンはまだOKです。
