The tomato plants are slowing down somewhat and every other day the harvest is smaller. The peppers on the other hand are still ripening and changing color.
I love the yellow and orange Jalapeno peppers. They make a colorful addition to a #jalapeno bread and biscuit recipe I love.
I halved and removed the seeds to use some for jalapeno poppers. I will stuff the peppers, wrap them with bacon, and add them to the freezer. It is nice to have them premade for those nights when you feel like an appetizer.
The sweet peppers that were ready, were diced and frozen on the tray. After 24 hrs, I vacuum-sealed them and labeled them for the freezer.
I had enough tomatoes for a kettle of homemade sauce. That made 7 half-pint jars for the #pantry. I still have plenty on the vines that are green. So, I imagine I will have a few more rounds of sauce to make before fall arrives.
The largest raised bed was amended and replanted 3 weeks ago. I sowed another round of beets, swiss chard, and some zucchini. I did plant some turnip seeds but have only seen a small amount that germinated. I will end up purchasing some from one of the local farms nearby.
The garden has really filled in and looks crowded, yet, every plant is producing nicely. I only have one cucumber plant left and it is still climbing and setting new fruit. I should have a few more to enjoy with my meals.
The Banana peppers were large enough to preserve. I cut them into small rings and pickled them.
We don't eat many pickled peppers so these two jars will be all that I make.
I decided to harvest the last of the basil and left one plant so it would go to seed.
The tower gardens with the herbs in them needed harvesting. That was one morning getting them all cleaned and ready for the dehydrator. I have plenty of herbs to get me through the year and perhaps longer. Using the different tower gardens allowed me to grow more than I normally would have.
Also, I had so much parsley that I pureed it and froze it into cubes. That will make it easy to add fresh parsley to a recipe.
Look closely at the squash. Can you see the little vole? I caught him eating the end of the squash one morning. Well, he has to eat too so I guess one less Butternut squash will be okay.
