Do you love to eat pasta? My family loves it, especially my daughter @tegoshei. She always loves to eat pasta in various recipes or cooking styles, such as spaghetti, carbonara, fettuccine with tuna, and many more.
I usually cook some of her favorite foods when she rests from work because I want her to enjoy her day off with her favorite food. Last Sunday, I cooked one of her favorite foods, which was pasta. To make it different from my other pasta dishes, I made it with some chicken and veggies. That was "Chicken Fillet Stir Fry with Veggies in a Creamy Pasta".
I used carbonara flat pasta because I like it too. So, here's how I did it.
Chicken Fillet with Veggies Stir Fry in a Creamy Pasta
INGREDIENTS:

- Carbonara Pasta
- Chicken Fillet
- Potato
- Carrot
- Cauliflower
- Onion
- Garlic
- Spring Onion (you can use parsley too)
- Bell Pepper
- Cheese
- Soya Milk or Fresh Milk
- Evaporated Milk
- Creamer
- Cream of Mushroom Powder
- Magic Sarap Seasoning
- Ground Black Pepper
- Knorr Chicken Cube
- Knorr Liquid Seasoning
- Salt
- Canola Oil
- Soy Sauce
- Water
PREPARATION:

Wash the chicken fillet thoroughly and then cut it into small pieces.
Wash and peel the potato then cut into small pieces
Wash and peel the carrot, and then cut it into small pieces.
Wash the cauliflower, then cut it into pieces.
Peel and wash the onion, and then cut it into small pieces.
Crush and peel garlic, then cut into small pieces.
Wash spring onions and then cut into small pieces. (Set aside some green cut spring onions for garnish.)
Wash the bell pepper and then cut it into small cubes.
Grate the cheese.
Make a slurry out of cream of mushroom powder.
And then set all the ingredients aside.
COOKING TIME:

Boil some water in a pot or a pan. Add 1 1/2 tbsp canola oil and 1 tbsp salt. Then, cook the pasta until it is al dente. Strain the pasta and drain it, then set it aside.
In a pan or cooker, combine the soya milk, evaporated milk, and cream of mushroom slurry. Bring them to a boil on a low to medium heat. Then add the creamer and continue boiling until it becomes slightly thicker.

Then add some grated cheese and a pinch of Magic Sarap seasoning to taste, and stir thoroughly to combine.

Then, gradually add the pasta. Stir and toss them carefully until well mixed.
Then transfer to a larger bowl or any container of your choice.
Then garnish with some spring onions or parsley and set aside.
Now let's cook the chicken and veggies.
Heat some canola oil, sauté onions, garlic, and white spring onions until fragrant.

Then add the chicken fillet and season with ground black pepper and chicken cube. Sauté them until the chicken cube dissolves.
Then add 1 tablespoon of soy sauce, 1 teaspoon of Knorr liquid seasoning, and a little of the Magic Sarap seasoning. Continue sautéing until the juice from the chicken itself comes out and then evaporates.

Then add the carrot, cook for about 3 minutes, and then add the potato. Continue cooking for another three minutes. Stir and mix them well. After 3 minutes, add the cauliflower. Continue stirring to combine them well.
Then add 1 cup of cream of mushroom slurry and 1/2 cup creamer. Mix again, then cover the pan and continue cooking until the chicken and vegetables are cooked through.

Then add some grated cheese and the diced bell pepper. Mix them well, cover the pan again, and continue cooking for an additional 2 minutes.

And voila!! Our chicken fillet with veggie stir fry in a creamy pasta is ready to serve.

A beautiful smile from my daughter once again when she saw what I prepared. It's one of her favorite dishes. A full and happy tummy again! That was for our lunch and dinner, minus the brown rice. We just have some fruit and cake for dessert.
