"Kai Chiang" is a type of sausage made from coarsely ground chicken meat and chicken fat, mixed with seasonings such as soy sauce, sugar, salt, spices, and herbs. The mixture is then stuffed into casings and dried. (The casings can be : Natural casings such as cleaned and hygienically preserved pork, goat, or sheep intestines. Or Artificial casings such as regenerated collagen casings.
สวัสดีวันพุธค่ะ 🤗 หวังว่าเพื่อนๆทุกคนสบายดีนะคะ ถ้ากล่าวถึงอาหารไทยเมนูเผ็ดจัดจ้าน หนึ่งในนั้นคือเมนูประเภทยำ ซึ่งเป็นเมนูโปรดสำหรับคนที่ชื่นชอบการรับประทานรสเผ็ดของหลายๆคน ความมีเสน่ห์ของเมนูนี้คือ การปรุงน้ำยำให้ได้รสชาติที่เป็นเอกลักษณ์ มีกลิ่นหอมของเครื่องปรุงและสมุนไพรไทยที่เน้นความสด สะอาด ส่วนวัตถุดิบอื่นๆ ไม่ว่าจะเป็นเนื้อสัตว์ หรือผัก ก็สามารถเลือกใส่ได้ตามต้องการ สำหรับวันนี้ฉันทำ ยำไก่เชียงไข่เค็ม จึงนำสูตรและขั้นตอนทำมาแบ่งปันเพื่อนๆค่ะ
Recipe: Spicy Slad with Kai Chiang and Salted Egg (Yam Kai Chiang Khai Kem)
🌶️ Ingredients:
- 1 piece of Kai Chiang
- 1 salted egg
- 1 onion
- 1 tomato
- 1 small cucumber
- 1 handful of Culantro leaves
- 10-15 fresh chilies
- 2 lemons
- 2 tablespoons fish sauce
- 1 tablespoon palm sugar
🌶️ วัตถุดิบ
- ไก่เชียง 1 ชิ้น
- ไข่เค็ม 1 ใบ
- หัวหอมใหญ่ 1 ลูก
- มะเขือเทศ 1 ลูก
- แตงกวาลูกเล็ก 1 ลูก
- ผักชีฝรั่ง 1 กำมือ
- พริกสด 10-15 เม็ด
- มะนาว 2 ลูก
- น้ำปลา 2 ช้อนโต๊ะ
- น้ำตาลปี๊บ 1 ช้อนโต๊ะ
🍅🥒 Ingredient Preparation / การเตรียมวัตถุดิบ
- Kai Chiang > Grill or fry the Kai Chiang until cooked, then cut it into bite-sized pieces. Set aside.
ไก่เชียง > นำไก่เชียงไปย่างให้สุก หรือจะนำไปทอดก็ได้ แล้วหั่นเป็นชิ้นพอดีคำ พักไว้
- Salted Eggs > Boil the salted eggs until fully cooked. Let them cool, then cut in half and scoop out the flesh easily with a spoon. Set aside.
ไข่เค็ม > นำไปต้มให้สุกดี รอให้เย็นแล้วผ่าครึ่ง ใช้ช้อนตักออกจากเปลือกได้อย่างง่ายดาย ตั้งพักไว้
- Tomatoes and Onions > After peeling and washing, pat them dry. Cut them in half and slice into desired shapes and sizes.
มะเขือเทศและหอมใหญ่ > หลังจากปอกเปลือกและล้าง ซับให้แห้ง นำมาผ่าครึ่งแล้วหั่นเป็นชิ้น รูปร่างและขนาดตามต้องการเลยค่ะ
- Cucumber > Wash thoroughly, pat dry, then cut in half lengthwise and slice into small pieces.
แตงกวา > ล้างให้สะอาด ซับให้แห้ง ผ่าครึ่งตามยาว แล้วหั่นเป็นชิ้นเล็กๆ
- Fresh chilies > remove the stems, wash thoroughly, pat dry, then roughly pound them. Transfer to a bowl and set aside.
พริกสด > เด็ดขั้วออก ล้างน้ำให้สะอาด ซับให้แห้ง แล้วนำไปตำพอหยาบ ตักใส่ถ้วยเตรียมไว้
- Culantro leaves > Wash each leaf carefully, pat dry, and finely chop.
ผักชีฝรั่ง > ล้างทีละใบให้สะอาด ซับให้แห้ง แล้วหั่นฝอย
- Lime > Wash well, cut, and remove the seeds. Prepare for use.
มะนาว > ล้างให้สะอาด ผ่าเอาเม็ดออก เตรียมไว้
🥗 Steps to Make Spicy Slad / ขั้นตอนการทำยำ
- Prepare the mixing bowl : First, I’ll make the dressing by combining fish sauce, palm sugar, and lime juice in the bowl. Stir until the palm sugar is fully dissolved and add the fresh chilies, Taste the dressing ( The signature flavor of Yum is spucy, sour followed by salty and sweet, but you can adjust the taste to your liking.)
เตรียมถ้วยผสม ฉันจะปรุงรสน้ำยำก่อน โดยใส่น้ำปลา น้ำตาลปี๊บ และน้ำมะนาวลงไปในถ้วยผสม คนให้เข้ากันจนน้ำตาลปี๊บละลายดี ใส่พริกสดที่ตำเตรียมไว้ แล้วชิมรสชาติ ซึ่งรสชาติที่โดดเด่นของยำคือ รสเผ็ด, เปรี้ยว ตามด้วยเค็มและหวาน แต่เราสามารถปรับรสได้ตามชอบเลยค่ะ
- Add the prepared tomatoes, cucumbers, and onions, then mix well.
ใส่มะเขือเทศ แตงกวา และหอมใหญ่ที่หั่นเตรียมไว้ แล้วคลุกเคล้าให้เข้ากัน
- Add the prepared salted eggs, use a spoon to cut them into pieces, then mix well.
ใส่ไข่เค็มที่เตรียมไว้ ใช้ช้อนตัดให้เป็นชิ้นลง แล้วคลุกเคล้าให้เข้ากัน
- Add the prepared Kai Chiang then mix thoroughly.
ใส่ไก่เชียงที่หั่นเตรียมไว้ แล้วคลุกเคล้าให้เข้ากันๆ
- Finally, add the thinly sliced culantro leaves and gently mix everything together. Taste and adjust the seasoning if needed.
สุดท้ายใส่ผักชีฝรั่งหั่นฝอย ค่อยๆคลุกเคล้าให้เข้ากัน ชิมรสชาติอีกครั้ง

Serve the Spicy Salad with Kai Chiang and Salted Egg on a plate, ready to eat. Normally, I enjoy this dish as an afternoon snack along with fresh vegetables
