Happy Friday from Thailand! How is everyone doing? I hope you're all doing well. 😄 For today's lunch, I made a simple dish using ingredients I already had in the fridge. Since I had some udon noodles that I bought from the supermarket two days ago, I decided to boil them in broth and added some vegetables, minced pork, and an egg. The result was a delicious. The Sukiyaki udon with pork balls served hot with sukiyaki dipping sauce. It was so tasty! So, I wanted to share the recipe and cooking steps with you all as an idea for a quick and easy meal when you're short on time.
สวัสดีวันศุกร์ค่ะ เพื่อนๆเป็นอย่างไรกันบ้าง หวังว่าทุกคนสบายดีนะคะ 😄 มื้อเที่ยงวันนี้ ฉันทำเมนูง่ายๆ จากวัตถุดิบที่มีอยู่ในตู้เย็น เนื่องจากฉันมีเส้นอุด้งที่ซื้อมาจากซุปเปอร์มาเก็ตเมื่อสองวันก่อน จึงนำมาต้มกับน้ำซุป โดยใส่่ผัก หมูสับ และไข่เพิ่มลงไปด้วย จึงได้เป็นเมนู สุกี้อุด้งหมูก้อน รับประทานแบบร้อนๆกับน้ำจิ้มสุกี้ อร่อยๆมากๆค่ะ ฉันจึงนำสูตรและขั้นตอนทำมาแชร์ให้เพื่อนๆ เพื่อเป็นไอเดียในการทำอาหารสำหรับมื้อที่มีเวลาจำกัด
Recipe : Sukiyaki udon with pork balls
🥕 Ingredients
- 1 pack of udon noodles (140 grams)
- 2 tablespoons minced pork
- 1 egg
- 1 cup Chinese cabbage
- 1 handful of enoki mushroom
- Carrot, sliced 3-4 pieces
- 1 pork flavored soup cube
- 1 cup sukiyaki sauce
- A little ground black pepper
- 1 teaspoon fish sauce
- 2 cups water

Marinating the Minced Pork
- First, I’ll marinate the minced pork with just two seasonings: ground black pepper and fish sauce. After mixing the seasonings and minced pork well, I’ll shape them into two equal-sized round patties and set them aside.

Preparing the Vegetables
- Feel free to use your favorite vegetables or whatever you have on hand! Here’s how I prepare the three vegetables I’m using:

- Carrot > Peel and slice into thin rounds (not too thick).

🍳 Cooking Instructions / การปรุง
- Place a pot on the stove, add water and a soup stock cube. Wait until the water boils and the cube dissolves completely.

- Gently add the prepared pork balls and wait until they are fully cooked.
นำหมูก้อนที่เตรียมไว้ค่อยๆใส่ลงไป รอจนสุกดี
- Add the prepared carrots, napa cabbage, and golden needle mushrooms. Wait for the soup to boil again.
ใส่ แครอท ผักกาดขาว และเห็ดเข็มทองที่เตรียมไว้ รอน้ำซุปเดือดอีกครั้ง
- Add the udon noodles and stir gently with a spoon to separate them. Wait until the noodles are cooked.
ใส่เส้นอุด้ง ใช้ช้อนคนเบาๆให้เส้นแยกออกจากกัน รอให้เส้นสุก
- Crack an egg into the pot and wait for the soup to boil again, then turn off the heat. This will give you a runny lava-style egg yolk. If you prefer a fully cooked egg, keep it on the heat for another minute.

Place the Sukiyaki udon with pork balls in a bowl and enjoy while hot. The broth is rich and well balanced in flavor. The udon noodles stand out for their soft, chewy texture. The pork balls, made from lean red pork with a bit of fat, are tender and juicy, never tough or dry. The three types of vegetables add a natural sweetness, enhancing the broth’s flavor.
When paired with sukiyaki dipping sauce, a mix of salty, sweet, tangy, and slightly spicy notes the taste becomes even more delightful.
