Today, I made some crispy crepes as a snack. I’m sure many of you have tried crepes before, but did you know they vary from country to country? Thai-style crepes are thin, extra crispy, and filled with a mix of savory or sweet ingredients, whatever you prefer!
For today’s version, I went with Foi Thong and dried raisinsa, classic Thai combo. Thai friends are likely to be familiar with these two fillings. They’re a popular pairing in many Thai desserts, balancing sweet and tangy flavors perfectly. The Foi Thong adds rich sweetness, while the raisins give a subtle sour contrast.

สวัสดีวันพฤหัสบดีค่ะ เป็นอย่างไรกันบ้าง หวังว่าทุกคนสบายดีนะคะ วันนี้ฉันทำเครปรับประทานเป็นของว่างค่ะ ฉันคิดว่าเพื่อนๆน่าจะเคยรับประทานเครปกันนะคะ ซึ่งเครปแต่ละประเทศ อาจจะมีลักษณะที่แตกต่างกัน สำหรับเครปสไตล์ไทย จะมีลักษณะของแป้งที่บางและกรอบ และใส่ไส้ที่หลากหลายมีทั้งไส้คาวและไส้หวานให้เลือกตามความชอบ วันนี้ฉันใช้ไส้ ฝอยทองและลูกเกดแห้ง เพื่อนๆชาวไทยต้องคุ้นเคยกับสองไส้นี้แน่นอน พวกมันมักจะถูกจับคู่กันเมื่อนำมาทำเป็นไส้ขนมหลายๆชนิด มันเป็นรสชาติที่รวมกันได้อย่างลงตัว ด้วยรสหวานที่โดดเด่นของฝอยทองตัดกับรสเปรี้ยวอมหวานของลูกเกดแห้ง สำหรับเครปที่ฉันทำ โดยรวมแล้วรสชาติอร่อย การทำก็ง่าย เพื่อนสามารถทำตามได้แน่นอน
RECIPE : Crispy and sweet Thai Crepe 🌮 (FoiThong & dried raisins Crepe)
สูตร : เครปฝอยทองลูกเกด 🌮
Ingredients / วัตถุดิบ
Crepe batter ingredients
- 100 grams of all purpose wheat flour
- 120 ml. of Plain fresh milk
- 15 grams of rice flour
- 40 grams of sugar
- 20 grams of rice bran oil
- 1 teaspoon of baking powder
- 1/2 teaspoon of Baking soda
- 1/4 teaspoon of salt
- 1 teaspoon of vanilla butter extract
- 1 egg

- แป้งสาลีเอนกประสงค์ 100 กรัม

- น้ำตาล 40 กรัม

- เกลือ 1/4 ช้อนชา
- วานิลลาบัตเตอร์ 1 ช้อนชา
- ไข่ 1 ฟอง
Filling > I used FoiThong and dried raisins.
ไส้เครป > ฉันใช้ฝอยทองและลูกเกดแห้ง
Instructions / ขั้นตอนการทำ
Mix Dry Ingredients: In a mixing bowl, combine all the dry ingredients first: wheat flour, rice flour, baking powder, baking soda, salt, and sugar. Mix well.
เตรียมแป้งเครป > ในถ้วยผสม ฉันจะใส่วัตถุดิบแห้งก่อน คือ ใส่แป้งสาลี แป้งข้าวเจ้า ผงฟู เบกกิ้งโซดา เกลือ และน้ำตาล คนให้เข้ากัน
Add Wet Ingredients: Add eggs, rice bran oil, vanilla butter extract and half of the fresh milk. Stir until smooth.
ต่อไป ใส่ไข่ น้ำมันรำข้าว กลิ่นวานิลลาบัตเตอร์ และนมสดครึ่งหนึ่ง คนส่วนผสมให้เข้ากัน
Then, pour in the remaining half of the milk and mix again until fully incorporated. (Dividing the milk into two parts helps prevent lumps and ensures a smooth batter.) Cover the bowl and let the batter rest for about 15 minutes.

Cooking the Crepes
Heat the Pan: Place a flat-bottomed pan over low heat. Once the pan is very hot, scoop about 1 ladle of batter and pour it into the center of the pan.
Spread the Batter: Quickly swirl the pan to form a thin, even circle. Wait until the edges set.
ตั้งกระทะก้นแบนด้วยไฟอ่อน รอจนกระทะร้อนจัด แล้วตักแป้งประมาณ 1 ทัพพี เทลงกลางกระทะ จากนั้นเกลี่ยให้เป็นวงกลมบางๆ รอจนแป้งเริ่มเซตตัว
Add Fillings: Sprinkle Foi Thong over half of the crepe, spreading it evenly.

Scatter dried raisins on top of the Foi Thong. Gently fold the empty half of the crepe over the filling, creating a semi-circle shape.

Notes: Adjust sweetness to taste and For extra crispiness, cook a little longer on low heat.

Serve/เสิร์ฟ:
Remove from heat and enjoy thecrispy, sweet crepe! I ate them with mulberries and Rose Apple (Tub-tim-jun variety) , which I picked from my backyard garden. They paired really well together.
