ยำปลาอินทรีย์เค็มรสแซ่บ
During the recent Songkran holiday, my husband’s younger brother visited our home. He traveled from Krabi Province and brought along a variety of foods, including snacks, fruits, and both fresh and dried seafood. What caught my interest was the salted fish they gave us in multiple packages. It’s salted mackerel cut into pieces, with each piece individually packaged.
I haven’t eaten this type of salted fish in a long time. I took out one piece and stored the rest in the fridge. It can last a very long time without spoiling.
One large piece of salted fish will be used to make a spicy-sour salad. I won’t add any salty seasoning to the dressing because the saltiness from the fish is enough. When I came up with this recipe, it made my mouth water! 😆

- 1 piece of salted mackerel
- 1 tbsp fresh chili
- 2 tbsp shallots
- 2 tbsp lime juice
- 1 tsp sugar
- ปลาอินทรีย์เค็ม 1 ชิ้น
- พริกสด 1 ช้อนโต๊ะ
- หอมแดง 2 ช้อนโต๊ะ
- น้ำมะนาว 2 ช้อนโต๊ะ
- น้ำตาล 1 ช้อนชา
Preparation of ingredients || การเตรียมวัตถุดิบ 🐟🌶️🌰
- Salted Mackerel > Due to its strong salty flavor, rinse the fish several times or soak it in water for about 10 minutes to reduce the saltiness. Drain well and set aside.
ปลาอินทรีย์เค็ม> เนื่องจากปลาจะมีรสเค็มมาก ต้องนำไปล้างน้ำหลายๆครั้ง หรือแช่น้ำทิ้งไว้สัก 10 นาที เพื่อลดความเค็ม แล้วตั้งพักไว้ให้สะเด็ดน้ำ
- Shallots and Fresh Chilies > Peel the shallots and rinse them along with the fresh chilies. Drain well, then finely chop into small pieces. Set aside.
หอมแดงและพริกสด > ปอกเปลือกหอมแดง และนำไปล้างน้ำพร้อมกับพริกสด ตั้งพักให้สะเด็ดน้ำ แล้วหั่นเป็นชิ้นเล็กๆ ตั้งพักไว้
Procedure to cook || ขั้นตอนการปรุง
- Frying the Salted Mackerel > Place a pan over medium heat and add vegetable oil. Once the oil is hot, carefully add the prepared salted mackerel. Flip to cook both sides evenly until golden and cooked through. Transfer to a plate and set aside.
ทอดปลาอินทรีย์ > นำกระทะตั้งเตา เทน้ำมันใส่ เปิดไฟกลาง เมื่อน้ำมันเริ่มร้อน นำปลาอินทรีย์ที่พักไว้ลงทอด พลิกกลับด้าน เพื่ิอให้สุกทั้งชิ้น เมื่อปลาสุกดีแล้ว นำออกมาตั้งพักไว้
- Making Zesty Dipping Sauce > In a mixing bowl, combine lime juice, fresh chilies, shallots, and sugar. Stir until the sugar fully dissolves. Taste and adjust the flavor to your preference (e.g., adding more sugar, lime, or chilies).
ทำน้ำยำรสแซ่บ > เทน้ำมะนาวใส่ในถ้วยผสม ตามด้วยพริกสด หอมแดง และน้ำตาล ผสมให้เข้ากันจนน้ำตาลละลายดี ชิมรสชาติและปรับให้ได้ตามที่ชอบ
- Plating and Serving > Arrange the fried salted mackerel on a serving plate. Generously pour the zesty dipping sauce over the fish, ensuring each piece is evenly coated. Serve immediately.
