
My grandson allegedly requested that we make Brazilian Cheese Bread hot dog buns when I visit next week. Personally, I think his mother planted and nurtured that seed. The rolls, normally baked in golf ball-sized spheres, is one of her favorites. They have a delectably thin, crunchy shell, and a gooey, also mochi-textured interior. Sour manioc or cassava flour is mixed with grated parmesan cheese and other ingredients to create these heavenly delights. The upside is that they rarely last long when made. The downside is they don't maintain their perfect state very long, and after 4-6 hours are not worth consuming. It makes for a great party food, as guests jockey for position and favor to get their hands on one fresh from the oven.
