I'm delighted to share my recipe for Teh Wala Mutton Pulao with you today. This meal is rich and fragrant, making it ideal for any special event or simply a cosy evening at home. Now let's get started without further ado!
Ingredients:
1 kilogramme of lamb
3.25 cups of basmati rice
3 onions, chopped finely
two tomatoes, cut up
Yogurt, one cup
Ginger-garlic paste, two teaspoons
2 to 3 green peppers, chopped
1/4 cup cumin seeds
Coriander seeds, 1 teaspoon
1-stick of cinnamon
4 to 5 cloves
4-5 pods of cardamom
1 bay leaf, 2
One-half teaspoon of turmeric powder
1 teaspoon of red pepper flakes
Salt, as desired
Using oil or ghee for cooking
For garnish, use fried onions
chopped fresh coriander leaves as a garnish
Instructions:
The entire spices, including cumin seeds, coriander seeds, cinnamon sticks, cloves, cardamom pods, and bay leaves, should be added to hot ghee or oil in a big saucepan. Spices should be fried for one minute or until aromatic.
Add the chopped onions and cook them until they are golden.
After that, simmer for a minute while adding green chilies and ginger garlic paste.
Cook the chopped tomatoes after adding them until they are mushy and tender.
Mutton chunks should be added and cooked till brown.
Salt, turmeric powder, red chilli powder, and yoghurt are added. Once the mutton is thoroughly covered with the masala, stir well and simmer for a few minutes.
To make it boil, add water. Cook the mutton under cover until it is soft and cooked all the way through.
Basmati rice should be cleaned and soaked in water for 20 to 30 minutes.
Rice should be soaked before being added to boiling water in a different pot. The rice should be cooked for 5-7 minutes or until it is 3/4 done.
After draining the water, cover the mutton masala in the saucepan with the half cooked rice. Make sure the rice is distributed evenly.
After the rice is thoroughly cooked and fluffy, cover the saucepan with a tight-fitting lid and simmer it on low heat for 20 to 25 minutes.
Add fresh coriander leaves and fried onions as garnish.
Serve warm with salad or raita.
