Started reading some posts on HIVE and the food posts really made me hungry.
My son, Lee, has been so wonderful to me during this time of lockdown visiting me everyday except weekends. We normally have a breakfast together or a lunch depending on what time he comes. He was allowed out for 3 hours a day with the quarantine. They have subsequently lifted this ruling to allow 3 visits away from your home. This came into effect on Monday.
So, having had a lovely breakfast this morning, omelette with cheese, olives and chicken, I had a very small lunch but at 5 pm was starving and saw that I had the ingredients to make the wrap pizza.
Similar to the one Lee posted and taking his suggestion of gherkins and chicken, I was lucky enough to have leftover chicken and what better way to enjoy it than on a pizza.
My version of the homemade pizza

I started with my favourite Arrabiata sauce as a base
It's slightly tangy and adds a wonderful flavour.
Covered my toppings, chicken, gherkin, onion, red pepper, olives with a generous helping of white cheese
Popped this into a 180-degree oven for about 10 mins and then turned on the grill to brown the top.
Ashamed to say that this was all that was left - and I could have actually finished it - but stopped myself.
