Living alone presents a problem when trying to eat the right foods and especially when deciding to cook or not to cook.
If I didn't have to worry about my weight I might just live on chocolates and cakes. Terrible to have a sweet tooth.
Last night I decided I felt like a cooked meal.

Decided to see what fresh vegetables I had in my fridge and made a hotchpotch (I think that's what it's called) of what I had in the fridge - so carrots, peppers, onions, the skin of cucumber, rocket, corn, tomatoes and cooked slowly in olive oil with a nice Italian spice and some Origanum.
I already had some chicken and broccoli in my deep freeze - made from the last time I cooked so that was a blessing.
Turned out to be just what I felt like
Today I liquidised the leftover and had it over some tagliatelle.
My late father used to liquidise vegetables to make the most amazing peri-peri sauce - and having had some at lunch today it was just missing the peri-peri powder.
Also, I think I found the missing dish from my Tabouleh salad post.
Will definitely repeat when I crave Tabouleh salad again. It made so many varieties of meals for me.
