I welcome you to this continuation of reviews on Venezuelan coffee, which I have wanted to call fragments or remembrances of a past foreign to time, the reason for titling this series that way is because coffee is a reminiscence of our agricultural past and I consider it alien to time because culturally it has become an ontological aspect of Venezuelan society. In this context, today I want to review a coffee that comes from the plains of the Cojedes state in the lands of Araure, a brand that has gained strength in recent years in the homes of the country: Amanecer coffee.
A brief account
As in the first part I explained at length, more than a hundred years ago, Venezuela was a coffee powerhouse listed in the world ranking, however the emergence of the oil industry began an accelerated deterioration of the country's agricultural capabilities, including coffee activity. However, in the last 6 years there has been a strong resurgence of interest in returning to those agricultural roots and returning Venezuelan coffee to its former glory and this Amanecer brand together with Páramo is a brand that shares that same spirit.
It is interesting to see the historical development after the arrival of the oil industry. Although the introduction of coffee in Venezuela dates back to 1730 when we were a General Captaincy and it spread to the coastal and central areas of the country, it was during the 19th century that this item, together with cocoa, became driving forces of the national economy. promoting the generation of urban centers, ports as well as roads and waterways.
A century after the development of the oil industry, the deterioration of coffee activity has been such that when in other countries there are associations of coffee growers as a common practice to improve the quality of their products and determine sales prices, currently in Venezuela these associations They almost do not exist, predominating a mercantilist perspective and little technical development, which ended up classifying Venezuelan coffee as second-class.
Rising from the ashes
In this sad context, a small group of coffee growers associated themselves under the name Cooperativa Café Grano de Oro de Biscucuy in the Portuguesa state, composed of 50 small coffee producers. All their production follows a strict handling protocol: cultivation under shade, nutrition management. foliar and edaphic based on fertilizers. The commitment and dedication of this association seeks a clear purpose: to recover the reference of Venezuelan coffee. They are working to create a collective brand and it is from the plains of Araure in Portuguesa that the Amanecer brand was born.
This brand has several presentations but the ones that stand out the most are 2: Gourmet ground toast and the one I bring you today to review: Vacuum ground toast.
In Venezuela there is a saying that ground coffee must always be kept sealed because if it is left open the coffee loses its "spirit" and this refers to the fact that coffee tends to lose its aroma/flavor very quickly if it is left uncovered and In fact, once the coffee bean is ground, a rapid and inevitable loss of aroma begins. It is in this sense that the Vacuum Roasted Amanecer version is a presentation that seeks to maintain the quality, aroma and flavor of the coffee almost from the moment it was processed.

The first thing we did was open and evaluate the aroma of this better processed version and although its appearance is lighter than the Paramo coffee, this coffee has a caramelized essence that gives that characteristic flavor to this coffee, only in this vacuum version the scent is much more penetrating.
Then we proceeded to prepare the infusion, it is important to remember that this coffee is 100% Arabica coffee so it is more balanced, aromatic, has a more pleasant acidity and has less caffeine. This coffee, like the paramo, floods the entire kitchen with its aroma, this is a characteristic that makes these coffees unique.
In general, the coffee has a truly exceptional flavor. Those caramel notes that this version of coffee has are the product of an infusion with sweet spices, including sugar cane. This version of the Amanecer vacuum coffee has a fairly affordable price ($2.5). It is not as expensive as the Paramo but maintains great quality, which is why I highly recommend this coffee.

En este contexto hoy quiero reseñar un café que viene de los llanos del estado Cojedes en las tierras de Araure una marca que ha ganado fuerza en los últimos años en los hogares del país: café Amanecer.
Un breve recuento
Como en la primera parte expliqué de manera extensa más de cien años atrás Venezuela era una potencia cafetera cotizada en el ranking mundial, sin embargo la irrupción de la industria petrolera inició un acelerado deterioro de las capacidades agrícolas del país, entre ellas la actividad cafetera. Sin embargo, en los últimos 6 años ha resurgido con fuerza un interés por volver a esas raíces agrícolas y devolver a su antigua gloria el café venezolano y esta marca Amanecer junto con Páramo es una marca que comparte ese mismo espíritu.
Es interesante ver el devenir histórico posterior a la llegada de la industria petrolera. Si bien la introducción del café en Venezuela data desde 1730 cuando éramos una Capitanía General y este se extendió a la zonas costera y central del país, fue durante el siglo XIX que este rubro junto al cacao se convirtieron en motores dinamizantes de la economía nacional, promoviendo la generación de centros urbanos, puertos así como carreteras y vías fluviales.
Un siglo después del desarrollo de la industria petrolera el deterioro de la actividad cafetera ha sido tal que cuando en otros países existen asocianes de caficultores como una práctica habitual para mejorar la calidad de sus productos y determinar los precios de venta, actualmente en Venezuela estas asociaciones casi no existen predominando una perspectiva mercantilista y de poco desarrollo técnico lo que terminó clasificando al café venezolano como uno de segunda categoría.
Resurgiendo de las cenizas
En este triste contexto un pequeño grupo de caficultores se asociaron bajo el nombre Cooperativa Café Grano de Oro de Biscucuy en el estado Portuguesa compuesta por 50 pequeños productores de cafe, toda su producción sigue un estricto protocolo de manipulación: cultivo bajo sombra, manejo de nutrición foliar y edáfica basada en fertilizantes. El empeño y la dedicación de esta asociación busca un propósito claro: recuperar la referencia del café venezolano, están trabajando para crear una marca colectiva y es desde los llanos de Araure en Portuguesa que nace la marca Amanecer.
Esta marca tiene varias presentaciones pero las que más destacan son 2: Tostado molido gourmet y el que les traigo el día de hoy para reseñar: Tostado molido al vacío.
En Venezuela hay un dicho y es que el café molido debe mantenerse siempre sellado ya que si se deja abierto el café pierde su "espiritu" y esto se refiere a que el cafe tiende a perder muy rápidamente su aroma/sabor si se deja destapado y en efecto una vez que el grano de café es molido comienza un rápido e inevetable pérdida de aroma. Es en este sentido que la versión Amanecer Tostado al vacío es una presentación que busca mantener la calidad, aroma y sabor del cafe casi desde el mismo instante en que fue procesado.
Abriendo el empaque y apreciando el aroma
Lo primero que hicimos fue abrir y evaluar el aroma de esta versión mejor procesada y aunque su aspecto es más claro que el café Paramo, este café tiene una esencia acaramelada que le da ese sabor característico a este café, solo que en esta versión al vacío el aroma es mucho más penetrante.
Luego procedimos a preparar la infusión, importante es recordar que este café es 100% café arábico por lo que es más equilibrado, aromático, una acidez más agradable y tiene menos cafeína. Esté café al igual que el paramo inunda con su aroma toda la cocina esta es una característica que hace estos cafés únicos.
En general el café tiene un sabor verdaderamente excepcional, esas notas acarameladas que tiene esta versión del café es producto de una infusión con especias dulces entre ellas la caña de azúcar. Esta versión del café Amanecer al vacío tiene un precio bastante accesible (2,5$) no es tan costoso como el Paramo pero mantiene una gran calidad por lo que recomiendo ampliamente este café.
