There are days when one just wants to stay in bed and sleep. This is one of those days for me. I have been pulling out all-nighters to finish up some off-chain projects and "bonding" with family members via #Netflix, and it has caught up with me. I need some shut-eye.
But before I head back to dreamland, I would like to share with you the breakfast that I made to help me through this sluggish day.
Scrambled Eggs
I made some scrambled eggs for today, being the lazy day that it is. So, two eggs, 100 g. sliced button mushroom, one fresh oregano leaf, two tablespoons of coconut oil, some salt, and pepper.
The cooking is simple and straightforward. Just heat the oil in a pan, put in the mushrooms, and saute for a while. The oregano comes next; put it in when the mushroom starts to crackle. Season with salt and pepper and stir.
Whisk eggs and put them in the pan. Add a little more salt and pepper and any other spice that makes you happy. lol. Seriously. Cooking is all about love so the spice that makes you happy will help make the dish awesome.
I did not use butter so the flavors need a little more help to ump the taste. The oregano helps with the aromatics and makes the dish unique for me.
MOKA COFFEE
It was a nice lazy breakfast, for sure. Now, on to the focal point of my blog post.

To help liven up my day, I brought out the old Moka Pot and decided to try the DRT coffee on it. Breakfast wouldn't be the same without some black liquid stuff and I get my daily dose of caffeine. Two birds with one stone. lol
For this brew, I put in 2 1/4 tablespoons of ground DRT Coffee. It did not have the best aroma you'd expect but the taste did not disappoint. In hindsight, I thought it better to increase the amount of ground coffee to 3 tablespoons. It was flavorful but a little light.
Another component that I tried out was this Honey Melon Flavored Soya Milk, which I put in the coffee without sugar. It smelled nice and was very tasty and refreshing on its own. In the coffee, I think it worked well.

To end, the lazy morning turned out to be a delight: the coffee produced by the Moka pot was great, though a little light; the Honey Melon Soya Milk was great on its own as well as with the coffee; and, the scrambled eggs with mushrooms and oregano did not disappoint.
